The chow chow in the south is a lot like what Char posted w/ the exception cut up your veggies, toss the salt w/ them and then let sit in a colander several hrs or overnight to drain away excess liquid. You then make your syrup, pack the veggies in jars, fill w/ syrup and water bath for 10 mins.
