I also make the mock danish, but add ground flaxseed and vanilla whey protein powder to give it more substance. And of course, I pan fry it. I swear...with the tastes just like french toast!

This morning I'm having it with a little powdered erythritol and chopped peaches. Yummy!

When life happens, sometimes you NEED 'Plan C'...
