I'm not using a crust.

Pumpkin pie

1- 15 oz. can pumpkin
2 eggs
1 c. coconut milk( I use organic)
1 T. gelatin
2 T. brown sugar sub ( whatever you use for brown sugar)
1 c. sweetner ( your choice, also taste to see if sweet enough. I used ezsweetz)


Put pumpkin, sweetners in a large bowl , mix well. Add gelatin to coconut milk and let dissolve in a small bowl. Add 1 egg at a time mix well after each egg to the large bowl with pumpkin.Now pour your milk & gelatin in with the pumpkin mix throughly.
Now pour into casserole dish or pie pan and bake for 45 to 55 mins. in oven at 350 degrees.
