Banana Nut Bread
Serves 12- 14 = 3 Smart Points per slice (I got 14 nice sized slices)
take note at bottom

3 large ripe bananas well mashed
2 eggs, beaten until light
2 cups bread flour or reg.
1 cup granulated Splenda Or of choice
1/2 c unsweetened applesauce(optional)
1 tsp salt
1 tsp baking soda
1/2 c chopped walnuts


1. Preheat oven to 350 F and grease a 9 x 5 loaf pan or spray with nonstick spray

2.In large mixing bowl, mix the bananas, applesauce (if using) and eggs together until they are well combined

3. In a separate bowl, stir together the flour, sweetener,salt and baking soda until well combined

4.Stir the flour mixture into the banana mixture, just until blended and then stir in the walnuts.

5. Put the batter into the sprayed or greased pan and spread out evenly.

6. Bake for 5- 60 minutes or until a toothpick inserted in the center comes out clean or with just a few moist crumbs.

7. Remove from oven and cool 5 minutes. After five minutes remove from pan and let cool completely.

6 SP with sugar, 3 SP with Swerve or Granulated Splenda, 4 SP with Truvia Baking Blend
