Tuna and Black Eyed Pea Salad
Tuna and Black Eyed Pea salad
1 cup Black Eyed Peas (canned), rinsed and drained
4 oz Chunklight Tuna In Water
1 cup Celery, diced
3 oz Onions, Diced, diced
1/2 cucumber(s), diced
1 tbsp Lemon Juice
1 tbsp Organic Apple Cider Vinegar
Toss everything well, add salt and pepper to taste and refrigerate at least an hour.
To serve: eat as-is, or over lettuce, or in a low-cal pita.
I usually toss with 2-3 cups chopped romaine and add either a low-fat dressing or more vinegar.
