Quick and Easy Seafood Chowder
Quick and Easy Seafood Chowder


3 oz Cod Fish Fillets
3 oz shrimp
3 oz Celery Hearts (about 2 large stalks)
4 stalk Fresh GREEN ONIONS
1 cup Crushed Tomatoes In Tomato Puree
1 cup Chicken Broth
1 tsp extra-virgin olive oil
1 Garlic Clove, minced
1 ea salt and pepper, to taste
1/2 tsp Dried Italian Seasoning
1/4 tsp Crushed Red Pepper (optional)


Cut shrimp in half or thirds if they're large.
Dice fish into approximately the same size.
Slice celery and green onions thinly.
Saute celery, onions and garlic (and pepper flakes if using) until fragrant in the olive oil, then add the seasoning, tomatoes and broth.
Simmer until hot then add the fish and shrimp and simmer for 3-4 minutes until the fish is cooked through.
Serve immediately.
Makes 2 servings @
