Easy Peach Salsa
Easy Peach Salsa
(You can sub pineapple, mango, oranges, etc for the peaches)


2 1/2 servings per can Rotel Original (1 can -drain and reserve liquid)
1 cup Frozen Sliced Unsweetened Peaches (about 10 slices)
1/4 cup Cilantro, chopped
3 tbsp Fresh Lime Juice
1 packet sweetens Stevia Plus
salt and pepper to taste


This is super easy.
Chop 1/2 the peach slices into small dice, set aside.
Chop the cilantro and set aside.
Rough chop the other peach slices and toss them into a blender with the liquid from the rotel and the lime juice and 1/2 as much stevia as you think you need.
Puree until smooth.
Stir in the remaining ingredients, taste and add salt and pepper.
Refrigerate at least and hour for flavors to blend.

I like it on grilled chicken or fish:)
It's also good with sprouted grain tortilla chips (not low carb) or low-carb pita chips.

It's not as sweet as commercial fruit salsa though. Of course you can make it as sweet as you like:)
