Bahn Mi Style Sprouted Grain Wrap

A traditional Bahn Mi would be served on a crusty roll and have a pork pate (of sorts) on it and a mayonnaise based dressing.
To make this version more "any diet" friendly, I left off the high calorie mayo and pate, and subbed out the bread for a sprouted grain tortilla. You could use sprouted grain bread and make a pannini style sandwich as well. Or use a low-carb wrap.


Bahn Mi Style Sprouted Grain Wrap

1 - Ezekiel 4:9 - 100% Flourless Sprouted Grain Tortilla Wrap (this is the large 150 calorie one)
4oz - Boneless/skinless Chicken Breasts, slightly pounded to get the marinade in better
1 medium Carrots - Raw sliced thin
3 medium Radishes - Raw sliced thin
1T Red Boat - Fish Sauce divided
1T Coconut Secret - Raw Organic Coconut Aminos divided
6 drops Now - Stevia Glycerite (or about 1.5pkts of other brand) divided
1 cup shredded Romaine Lettuce
1T Hellmann's - Dijonnaise Creamy Dijon Mustard
1tsp Rooster Brand - Siracha Hot Chili Sauce
4T Bragg - Organic Raw ~ Unfiltered Apple Cider Vinegar
4T water
2-3 sprigs of cilantro(optional)
salt and pepper as needed
Heat the vinegar, water, half the stevia, about 1/4tsp salt, 1tsp each fish sauce and aminos until simmering. Let cool slightly while you cut the carrots and radishes into thin strips.
Once cooled a little, pour over the carrots and radishes and let "pickle" for an hour.
Meanwhile marinate the chicken in the remaining fish sauce, aminos and stevia for the same amount of time.
When ready, grill or pan fry the chicken until it's cooked through.
**I did this over high heat to get a slight carmelization on the chicken. It took about 3 minutes per side with it flattened to even thickness.
Mix the dijonnaise and rooster sauce and spread 1/2 on the tortilla, then add a little of the pickling liquid to the remaining sauce to thin -set aside.
Pile the romaine on the tortilla followed by the sliced chicken, then a pile of the pickled (drained) veggies, a few sprigs of cilantro(if using) then drizzle with the remaining sauce.
Wrap and enjoy!

Total: calories: 327; carbs 37g; fiber 6g; protein: 29g
