Orange Chicken with Brown Rice

Should be gluten free and FMD P1 appropriate.

Orange Chicken with Brown Rice


8 oz Chicken Breast (boneless,skinless), diced
1 medium Navel Orange
1 drops Stevia Glycerite, to taste
1 tbsp Coconut Aminos
1 carrot(s), sliced
2 stalk celery, raw, sliced
1 medium Yellow Onions, diced
2 cups broccoli florets
1 clove Garlic, Whole, thinly sliced
1 tsp Ginger Root, grated
1/2 cup Organic Chicken Broth
3 tbsp water
1 cup cooked brown rice


Grate the zest off half the orange.
Toss chicken pieces with salt, pepper and half the orange zest. Set aside.
Use a spoon and scrape out all of the orange flesh you can, along with any juice. Mix that with the coconut aminos, 1/2 the broth and water. Taste. If you want it sweeter, add a little stevia.
In a skillet, pour the remaining broth. Bring to a simmer along with the garlic and ginger for 1 minute, then add the vegetables and chicken, tossing to "stir fry".
Once the chicken is mostly cooked, add the remaining sauce and raise heat to high. Let sauce reduce by half and serve over the cooked rice (or add the rice to it and mix it up).

Makes 2 servings.
