My Grandmothers Classic 3 Bean salad
(as a salad or tossed with a salad)
Makes 10 servings*

Ingredients
15 oz Cut Green Beans, canned, drained
15 oz Dark Red Kidney Beans, drained
15 oz Canned Fancy Cut Wax Beans, drained
1/2 cup Yellow Onions - Diced
1/2 cup Celery Sliced
1/2 cup Light Zesty Italian Reduced Fat Dressing
2 tbsp Apple Cidar Vinegar
2 tsp Dill Weed, Dried


Directions

Drain and rinse the canned beans to remove any "soapy" taste.
Once drained well, mix with everything else and refrigerate overnight in a gallon size zipper bag or sealed bowl.
Shake, toss or stir 2-3x during refrigeration time to blend flavors.
Salt and pepper to taste just before serving.

Makes 10 servings as a salad,
*or you can toss this with 3 bags of cut lettuce(or 2 large heads, chopped) and make 20 servings.

Start Date: Off and on Lw carb since October 2003
My family insists that I make this every year.

Corn Casserole

1 can whole kernel corn (with juice)
1 can cream style corn
1 c. sour cream
1/4 c. sugar
2 eggs, beaten
1/2 c. melted butter
1 (8oz) box corn muffin mix

Directions
Mix together adding muffin mix last. Bake in large casserole or 9x13 pan at 350 degrees 50-60 minutes until set. Let stand 5 minutes before serving.


Corn Muffin Mix
2/3 cup all-purpose flour (I like gluten free)
1/2 cup yellow cornmeal
3 tablespoons granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons vegetable oil (or melted palm shortening)

This sounds really good. The corn muffin mix at the bottom: is that just if you want to make your own instead of using the boxed? I'm not a cook, but if I can just use a boxed mix I think I might be able to handle it.

I make my own so it can be gluten free. You can use the Jiffy brand.
