Peachy Cherry Cobbler made with Gluten Free Bisquick
1 stick butter (1/2 cup) melted
1/4 cup sweetener of your choice*
1.5 cups low-fat buttermilk
1 cup gluten free (or fat free if you prefer) Bisquick
1 can sliced peaches in juice (no added sugar)
1 can sugar free cherry pie filling
In a 9x13 baking pan, 350 oven, melt the butter until sizzling.
Mix the buttermilk, sweetener* and bisquick. *if using liquid sweetener, decrease the buttermilk by that amount.
Mix the pie filling and cobbler (taste this -if it is not sweet enough, add up to 1/4 cup s/f vanilla or cherry syrup).
Pour the bisquick batter into the bottom of the pan into the butter. Do not mix in.
Spoon the fruit over the top.
Bake, uncovered, for 40 minutes or until the crust rises to the top and gets golden brown.
Makes 10 servings.
