Oriental Cold Noodle Salad:
Ingredients: 4 bags shiratake noodles (angel hair) drained and rinsed 0.5 Tbsp Sesame Oil 1/3 Cup Rice Vinegar 1/3 Cup Reduced Sodium Soy Sauce 1 Lime, Juiced 2 Cloves Garlic Minced 1/2 Red Pepper (I used bell) thinly sliced 1/2 English Cucumber thinly Sliced 1 Tbsp Red Pepper Flakes 2 Drops EZ-Sweetz Mix all ingredients, except noodles, in a large bowl. Add Shiratake noodles and mix well. Refrigerate for at least 1 hour and enjoy. Nutritional Value For Whole Recipe: Calories:191 Fat:8.2g Carbs:22.9g Fiber:4.55g Net Carbs:18.35g Nutritional Value For 1/4th Recipe: Calories:47.75 Fat:2.05g Carbs:5.73g Fiber:1.14g Net Carbs:4.59g *Note that I count all nutritional value of the Shiratake as 0 so they are not reflected in the counts. ![]() ![]() |

Someone create me a way to get crunchy noodles please! I just got an 18-bag case from the Fed Ex man today and am searching for new ideas. And I bought the fettuchini ones again, they ROCK!!
Would patting them dry and baking work? I'd hate to waste a bag or 2 trying to find a way! |

My favorite way to eat the shirataki noodles/rice:
![]() Spicy Coconut Shrimp Shirataki Serves 4 1/4 cup oil 1/4 cup sliced onion (or less) 1 tablespoon minced garlic (optional) 2 teaspoons minced fresh ginger 1.5 tablespoons coriander 1/2 teaspoon cumin 1/4 teaspoon cinnamon 1/8 teaspoon cayenne 1/8 teaspoon turmeric 1 cup drained canned tomato, chopped 2 1/2 cups unsweetened coconut milk 1/2 cup water 1 teaspoon salt 1 1/2 lbs large shrimp, peeled and cleaned 3/4 cup fresh cilantro Juice of 1/2 lime Shirataki noodles/rice Heat oil in lg skillet on med-hi heat. Add onions and stir cook for a couple of minutes, then add garlic and ginger,cook 2 minutes. Add the spices and tomatoes and cook for a couple of minutes, then add coconut milk, water and salt. Simmer until thickened, about 10 minutes. Add shrimp, simmer, stirring for 5 minutes. The shrimp should all be pink and cooked. Last, stir in cilantro and lime juice. Either serve over shirataki noodles, or add the noodles/rice to the pan, let it heat through for a minute and serve. My other favorite way of doing them is this.
When I make the marinade for chicken satay, I usually double or triple the amount and freeze some, so I have a quicker way the second time around. I also freeze some flat in a ziplock baggy and then I do the following: Rinse the noodles, snip them to make them smaller (angelhair pasta,) pat dry and spread out between 2 double layers of kitchen towels. Microwave on high for 1.5 minutes. Then I fry them for 5 minutes in 2 tsp of butter in a pan, tossing them around as I go. Grate in about a cup of zucchini and once that softens, break off a little of the frozen marinade and melt it into the stir fry. About a tbsp or so. Absolutely delish! And the texture is a lot like rice noodles, which makes the texture much less disturbing. ![]() |

Lovin' all the recipes! One of my faves isn't much of a "recipe" but it's a great low-cal way to fill me up on JUDDD down days. I mix spiral-sliced zucchini (8 cups raw, then cook and squeeze out water) with 3 bags of rinsed and pan-dried shirataki angel hair (both "noodles" hold the sauce better when they're drier).
![]() Then I add 2 cups of a good marinara sauce that runs 50 cals per half cup. Zucchini cals 160, shiratake 0, sauce 200 for a total of 360 calories for a huge bowlful that lasts me for a couple of days (and I eat big portions), providing I can keep my husband from eating it. ![]() |

Mmmm those look so good!
I tried the shrimp shape shiratake once and it's just gross. The thicker the shapes are the more un appetizing it is. Just a heads up. Stick with the angel hair, linguini, and rice and orzo shapes. |

The only thing I have used the rice for is in that "oatmeal" I pictured above. In the yellow bowl.
I want to try spanish rice with chicken sometime. I imagine, rinse and drain "rice", put in a hot dry pan to dry out a bit, add some butter, garlic, onion and a bit of salsa and let cook together. Then add diced chicken to cook. Put melted cheese over top. It's how my mom used to make it when I was young. |

My latest love
6 meatballs a bag of shirataki spinach fettuchini, (rinsed well) 1/4 c Philly Sante Fe cooking cream Warm the meatballs in the microwave, mostly to get a lot of the grease out. Toss in a pot with the shirataki and cream cheese, heat thoroughly. Watch out for the carbs in the meatballs, the Farmfresh I get at Wal-Mart have 3 carbs (2 fiber, 1 sugar) per 3 meatballs. The Wal-Mart brand has 8!! |

My co-worker, who recently started low-carb, found the RO*TEL website that has LOTS of recipes and the majority can be low-carbed. Like using the rice shirataki in the jumbalaya. MMMM

I've still got quite a few shiritake noodles. I really haven't used them because they give me a bit of tummy issues, not severe, but eh, and I also retain a little water because they are all fiber. |

I got so lucky Cathy. I've been out for quite a while but haven't had extra money to order a case, and i found a drug store here that has them! $3.25 a bag, but still, they are local. I bought 4 bags. I need to just go ahead and order a case, but for now, I'm so happy I can find them locally now.
