This is one of my faves! I rarely use the kidney beans, I usually just substitute whatever kinda bean I have on hand for them.
Taco Soup 3 frozen chicken breasts 1 envelope ranch dressing mix 1 envelope taco seasoning mix 1 medium onion, diced 1can Rotel tomatoes 1 can black beans 1 can Cannelli or any white beans 1 can kidney beans Put everything in crock-pot in order listed. Do not rise or drain beans. DON’T STIR. Cook on low for 6 to 8 hours. Take chicken out and shred with two forks. Put chicken back in, stir and eat.

PLEASE feel free to post your Phase 2 recipes there so we don't cause anyone to mess up on their Phase 1 program. do these have to be your own recipes? or can they be from other web sites?? I made Thai chicken from another site that was just about the best thing I've made in years....
Chicken breast 1C hot salsa{I used regular with a few shots of hot sauce} 1/4 cup peanut butter 1/4 cup soy sauce fresh ground ginger I put a little garlic cook in a crock pot on lo for like 8 hours and I added a package of frozen asian veggies near the end When done sprinkle with chopped peanuts and cilantro It was too good |

And I am a very experienced Beacher!I have learned in my dieting history(FAA= no sugar, no FLOUR, no wheat), that flours, any flours, are like shooting drugs...thats how fast it gets into my body. So, FWIW, I would not be using all these recipes with bean flours in phase I and use them much later in phase II...but hey, thats just me! I found it very beneficial to not eat any bread like things for a long time. ![]() |

From the SBD Daily Dish:
Green Bean and Squash Salad (Phase 1) Serves 1 Ingredients 1/2 cup fresh green beans 3 fresh plum tomatoes, sliced 4 ounces part-skim mozzarella cheese, cut into 1/2-inch cubes Pinch of coarse black pepper 1/4 cup Newman's Own® Parmesan & Roasted Garlic Dressing 1/2 cup yellow squash, cut into slices 1 1/2 ounces fresh basil, chopped Instructions Combine all the ingredients in a large salad bowl. Sorry I got this from the South Beach Century Club and I actually copied and pasted it because I thought I should so here it is:
Phase: 1 4-5 boneless/skinless chicken breasts (I use frozen to avoid over cooking) 3/4 cup hot salsa 1/4 cup peanut butter 2 T. soy sauce 1 t. grated gingerroot 1/4 cup chopped peanuts 2 T. chopped fresh cilantro Place chicken in 3 1/2 to 6-quart slow cooker. Mix remaining ingredients except peanuts and cilantro; pour over chicken. Cover and cook on low heat setting 8 to 9 hours or until juice of chicken is no longer pink when centers of thickest pieces are cut. Remove chicken from cooker, using slotted spoon; place on serving platter. Remove sauce from slow cooker; skim fat from sauce. Pour over chicken. Sprinkle with peanuts and cilantro. |

Roasted Chickpeas
1 (12 ounce) can chickpeas (garbanzo beans), drained 2 tablespoons olive oil salt (optional) garlic salt (optional) cayenne pepper (optional) Preheat oven to 450 degrees F (230 degrees C). Blot chickpeas with a paper towel to dry them. In a bowl, toss chickpeas with olive oil, and season to taste with salt, garlic salt, and cayenne pepper, if using. You can use any combination of spices you prefer also. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning. Be careful these are so delicious I can eat the whole can-so portion control is a must!

Vegetable Quiche Cups To Go Serves 6 Ingredients 1 package (10 ounces) frozen chopped spinach 3⁄4 cup liquid egg substitute 3⁄4 cup shredded reduced-fat cheese 1⁄4 cup diced green bell peppers 1⁄4 cup diced onions 3 drops hot-pepper sauce (optional) Instructions Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid. Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray. Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350°F for 20 minutes, until a knife inserted in the center comes out clean. Quiche cups can be frozen and reheated in the microwave. Peanut Butter cookies

South Beach Peanut Butter Cookies -------------------------------------------------------------------------------- Peanut Butter Cookies - All Phases 1 egg 1 cup of natural peanut butter (tons less sugar!) 1 cup of granulated Splenda 1 tsp vanilla Mix together very well, and drop teaspoon sized balls on a greased cookie sheet. (The smaller you make them, the more you get!) Bake at 325 for about 10 minutes. You should keep these in the fridge, as they can get crumbley. |

![]() 'Peanut Butter Cup' - All Phases 1-3 Serves 1 Ingredients: 1 no sugar added, fudgsicle 1 tablespoon natural peanut butter 1-2 tablespoons light frozen whipped topping Instructions: Scrape the fudgsicle off the stick (microwaving it for about 15 seconds helps). Then stir in the natural peanut butter and the light whipped topping. Mix together and enjoy. I put mine in the freezer for about 10-15 minutes. Try this if you're craving a dessert, it's like eating sinful ice cream. Count the calories in your sf/ff fudgsicle and light whipped topping, they are to be considered in the 75 calories per day sweet treats. The peanut butter is considered a nut/nut butter serving. |
