Cleo - You already know this, but you rock! I made the pizza tonight. I didn't have pizza sauce, so I just topped it with cheese and pepperoni. Yummy and filling! Two pieces and I was stuffed! DD9 had a piece and a half and likes it, too. I'll take the rest for lunch tomorrow. This is a keeper that I will make probably weekly!!! THANKS!

Just made some, but I messed up - I couldn't find where it said the thickness of the crust should be, so I made it super thin thinking it would be super crispy. Not so much. The crust turned out really flimsy so I'm eating it with a fork BUT it DOES taste amazing, I love pizza so much and there's a great pizza place right by my house so its good to have an alternative
Questions: How thick are your crusts? Do you drain the cauliflower before grating it? |

I made it tonight. There was no cauliflower taste. 10 yr old DD liked it and she does not like cauliflower. She said I could become the pizza lady at school!!! DH could not tell what the crust was made of when I let him taste what was left. It was not a complete success because I think I spread it too thin and I was being lazy so I sprayed a foil lined pan and it stuck to the foil. How think would you say that it is spread? 1/4" thick? Other than those issues, it was great tasting. I will make it again and I just opened the lasagna thread so that is on my list...... Thank You Cleo.

I think we should all pool our resources to buy a big tract of land in Colorado. We'll grow our own cauliflower and other veggies for the pizza and lasagne, make our own cheeses, raise hens for the eggs for oopsies. And Cleo will be our resident Chef. We'll call it Cleo's Culinary Casbah Commune. Or something like that. Sound good to everybody?

I love cauliflower, so it doesn't matter to me if you taste it or not.
I will be trying it this Saturday!! What an idea! I have made lots of things with cauli as a sub for potatoes. Never thought of this one. Only thing is the dairy issue for me sometimes, but I will make it anyway and see how it goes!! Thanks for the idea! |

My dream is to have an apiary and berry farm... I didn't think about a cream cheese vineyard. Such little cheeses to squish between my toes... Lora-- ooh ooh ooh. You're presenting me with a dubious problem in not having cheese. The cheese acts as both a binding and a texture agent (and keeps the crust from turning to an egg omelet). I would be afraid to obliterate it due to that. I don't know-- is there anything else that melts and can re-solidify to hold foods together? What about tofu? Could tofu be shredded and added in place of cheese?
