I finally made this, and it was delicious (gave you some link love on Twitter, Cleo).
Mine didn't turn out crispy though, except around on the edges (which was what I cut off, all around, and ate first I can't wait to try it again and get it right! It was all kinds of awesome, even botched! I want to try it with zucchini too! And I'm wondering what eggplant would do.

Thanks so much, Matrigna! I have better luck on metal. I've heard the crust sticks to stoneware. The eggplant might be nice as well. I'm going to use spinach next.

Very good!
Tried the cauliflower pizza crust the other day and way pleasantly surprised. Even my daughter, the skinny carb-o-holic, liked it and said she would eat it again. I need to spread it out more thinly, though. Firms up better.

It doesn't taste eggy, which is nice, since I'm not a huge fan of eggs! It's more pungent, like the cauliflower and the cheese went on a date and had pungent lovebabies.

Made this this afternoon for lunch! I didn't tell the kids that there was cauliflower in the crust LOL. I LOVED it, and the kids, always wary of LC anything also approved! Even before going LC, cheese was a favorite of mine and this makes a cheesy cheesy delight! YUM as always!

Guess I should explain - I riced the fresh cauliflower first in the food processor and now I'm ready to cook it. It seems like it wouldn't take very long in the microwave since the pieces are so small.

I microwave it till it's steaming and slightly mushy. Takes 10 minutes in my slow microwave, with the cut up cauli.

I just joined today b/c I am trying to learn how to live lc and love the idea of cauliflower pizza crust.
But what is with the messages that say Upgrade to Pro today Bandwidth exceeded photobucket. It looks like there should be some photoes of your process but all I get is lots of these messages. I even asked a friend to check it out and she said that is all she gets too and she's quite smart when it comes to computers.... Any thoughts? |
