I did it!

My first try and I made a pretty decent looking batch of oopsies. It's not as hard as it seems. So, if you are hesitating, it can't hurt to try!

Yep, I loved the oopsie. It is very sturdy and held up my bacon and egg sandwich quite well for my first induction meal. I am full and raring to explore. I am going to try the protein powder to see if it is more bread-like (but this is going to be a staple for me regardless!) and maybe tomorrow fire up the grill and have an oopsie burger!

Thanks, Cleo for making induction easier for the masses!

I got a quite "bready" version by adding 1 scoop unflavored protein powder (I like Designer Whey), 1 tablespoon each flax meal and raw wheat bran, to the egg yolk mixture - they're quite good!

The protein powder ones rounded out a little more, are a bit thicker and are not at all squishy. I'll let you all know how they taste tomorrow when I can re-start my 3-4oz. of cheese!

I made 2 dozen oopsies today (gotta stock the freezer before the weather gets too hot to turn on the oven in my kitchen), and now I'm all out of oopsie making supplies.

Looks like a trip to Costco will need to be scheduled for Monday morning.

I live in Pennsylvania. It's not so much that it gets too, too hot here (although we definitely have times when the mercury goes over 100F), it's that this house stays horribly HOT in the summertime, especially my little kitchen. The heat just builds up over the days, with nowhere to escape to.

Ranch house. Black roof. No shade trees. Our attic ends up radiating heat down into the house. Window air conditioners that can barely keep the house below 80F most of the time. Even if it cools off to around 50 at night, I can't open the windows that have the AC's in them, so the air circulation isn't good in here at all, so it doesn't really cool off at night.

I avoid using the oven at all during the summertime and prefer to do quick stove top cooking, crock pot or microwave cooking, because the heat hangs around for ages in a kitchen that's already far too hot.

Hence, the reason I'm making massive quantities of oopsies to store in the freezer.

Good idea! Here in Southern California (technically one big desert) those kinda days call for counter top oven. It's cute and so much cooler then the big oven, unfortunately the space inside is kinda small for oopsies.

Yeah, I could do 2 oopsies at a time in my little toaster oven... but even so, having that on for 30 minutes while they bake, lotsa heat generated by that little thing.

This is also why I was attempting to see how it turned out to make oopsies in the microwave. But of course what I ended up with was flatsies... and I do mean flat... about like a very limp, bendy potato chip. They were still tasty, but I wouldn't have gone to all the trouble of beating the egg white stiff if I'd realized they were going to go that flat!

I figure it's already hot out there anyway. I want to get a large, toaster/oven/convection oven, to go out there. I've seen some that are large enough to do what I need to do...[/COLOR]

Mama...just throwing this out there....someone, or you, could try and bake the oopsies on a grill and see how it goes. Newer gas grills have a great capacity to keep temperatures even and all that razz.
