I just made the Isomalt Mint Chocolate Chip Icecream, and the taste was fantastic. I might also add that it was the fastest ice cream recipe I've ever tried!

The only drawback was that there was too much xanthan gum for my taste. It came out sort of... snot-like. The fact that it was green from the mint syrup added to the effect. I remember repeatedly trying to get a spoonful of the stuff while it was half-frozen, but the lump I'd get onto the well of the spoon would slither off in one gooey piece! Once frozen, it was more palatable texturally but still too slimey. I decided to try a scoop in my Pepsi Max and it just sat at the bottom of the cup and sent up little curdled bits! I laughed my bum off during all these little ice cream adventures!

The bottom line for me, however, is that the taste was excellent and the texture (once I tweak it) is going to be totally perfect. This is my first time using isomalt and I'm so impressed! I'd challenge anyone to deny it tastes just like regular sugar-infused icecream.

I'm going to whip up a couple more batches tonight, different flavours.

Did you use the same amount of xanthan gum as not/Sugar in the recipe? That would explain the texture...unfortunately, you would be replacing a blend of 4 gums with 1 that's pretty strong on its own.

You could probably take it down to a third and it should work fine...though if you can get any guar, gum arabic, carrageenan...that would be helpful...

Oops, cancel that...I just went and checked the recipe, and it IS 1/2 Tsp of xanthan gum in the recipe. It's odd, there's enough volume in the recipe to take that much xanthan gum, I'm surprised you're getting this reaction. Either your gum is stronger or the measure is off...at a guess. Hmmmmmmmmmmmmmmmmmmm.

Hi Kevin, I want to make your chocolate sandwich cookies and wondered if I can use regular Hershey Cocoa instead of the Special Dark as I don't have that.

Are these a cookie cookie or more like a whoopie?

You can use whatever cocoa you like. I use the special dark cause my DW likes the taste of it better. Adjust your carb count to what kind you use.

Oh Lord, there is a whoopie pie recipe out there also. I went to the store today to look for that dark one and was in the baking aisle and forgot what I was supposed to be looking for . I will do one batch with what I have and see how it goes. Thanks much really do appreciate it.

I made the pitas per directions then broke them in pieces and let them sit on the counter overnight. They were pretty hard by then so I put them on a cooling rack on a 1/2 sheet baking pan, sprayed with EVOO, then sprinkled each side with garlic or onion salt then bake in a low oven till crisp.....if you like you can spray and salt again if flavor is not enough.

My DD Gave me my first Grand Baby yesterday at 4;04 PM ....A perfectly healthy 8 lb 12 oz absolutly gorgeous baby girl.
