3 ingredient recipes
 
I'm on the hunt for good, basic stuff. Dinners and whatnot. Cheap ingredients..... I'm looking for stuff that freezes well... a months worth of stuff.....

Diet Rite Cola Chicken

Feeds 4

4 chicken breast
1 can diet rite cola
1/2 cup low carb ketcup

put in a medium sauce pan (yes the raw chicken too) and bring to a boil. Put a lid on it and turn to medium heat for 30 minutes......take the lid off an let simmer for another 10 minutes.

This makes a really good bbq chicken. I shread it up and just keep some in the fridge.

I love to make Linda's Hamburger Cabbage. I made some recently and froze the rest. The other night I thawed it out and it was just as good. I also sprinkle a little parm. cheese on top and top with butter.

CABBAGE AND HAMBURGER
I just browned some ground beef, drained it, then stir-fried it with chopped cabbage. I cooked it until the cabbage was tender then seasoned to taste.

Makes about 8 servings

Per Serving: 215 Calories; 13g Fat; 20g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

boneless skinless chicken breasts pounded to thin out
garlic herb cream cheese
bacon

Put spoonful of cream cheese in center of chicken breast, wrap bacon around and secure with toothpicks. Brown for a bit to get bacon started. Finish in oven at 350 for about 30 minutes.

Simple and absolutely fabulous!!

Bacon Wrapped Chicken


Boneless Chicken breasts and/or Thighs
Soy Sauce
Sliced bacon

Cut chicken into 1 1/2" X 1 1/2" chunks. Marinate in soy sauce for about 2 hours. Drain and wrap about 1/3 of a bacon slice around each chunk. Thread on Bamboo skewers. Broil til bacon is crispy and chicken is cooked through, about 12-15 minutes.

You can let the chunks cool, remove from the skewers and then store in the freezer in Ziplok bags. Let them thaw, then microwave later to re-crisp bacon & heat chicken chunks.

DELICIOUS, and pretty cost-conscious if you mix boneless thighs with breasts and get a LOT of bacon on sale.....All you need is a salad or a veggie to complete the meal....

1 lb ground turkey
1 bag coleslaw mix
Soy sauce to taste

Brown ground turkey in deep skillet
Add bag of coleslaw
Splash of soy sauce
Mix well
Cover and simmer about 5 minutes

2 chicken breast halves
1/4 salsa
1/4 cup shredded cheese

Bake uncovered at 350 until the juices run clear. I usually triple this and freeze for later.

chicken parmigiana: chicken breast cooked then topped with marinara and fresh mozarella cheese (freeze at this point), then when ready baked until the cheese melts

chicken breast stuffed with any kind of cheese and either ham or veggies (spinach, mushrooms, onions), etc.

ground beef with broccoli and topped with a cheese sauce (Ragu makes an easy one... just pour :laugh:)

sausage and peppers in marinara sauce

all of them freeze well

Also, although this isn't a 3 ingredient meal... I think quiche would work very well for you... cheap and freezes well.

I like to make what I call BLT Bowl:

bowl of cherry tomatoes, sliced in half
mayo (to taste)
real bacon bits

Combine and enjoy :-)

1. Chicken Breast Strips
2. Chili-Garlic Sauce (usually near the asian/soy sauce at the grocery store)
3. Broccoli

Just put a little vegetable oil in a pan, add chicken till its brown, add sauce, stir, add broccoli and stir until chicken and broccoli is done.

not sure if you can freeze it but its simple and quick to make.

it's a bit spicy but definently not really hot like a jalapeno, one tablespoon of the sauce is plenty for flavor w/o the heat

Crock pot Rotisserie Chicken

1 whole chicken
Spray olive oil
Lawry's seasoned salt

Ball up aluminum foil and put in bottom of crock pot. Place seasoned chicken on top. Cook 4-6 hours.

These are great ideas. That chili-garlic chicken looks amazing! I do so love asian food!

My inspiration for this thread came from trying to cut costs. I'm looking into the frugal lifestyle. No, I won't reuse dryer lint or anything crazy like that, but why not shave some money off the grocery bill? Why not cut down on the electric? Things like that. lol.

So, keep them coming. I want to be able to eat for a month on 1 cart of groceries and maybe even be able to stock the freezer for the next month. I figure 30 meals or so will provide enough variety for me to repeat the same menu.

Spiced Shrimp

1/2 cup vinegar
1/2 cup water
1 T. Old Bay seasoning
1 tsp. salt
1 pound fresh medium shrimp

In a large saucepan, combine first 4 ingredients; bring to boil. Add shrimp, stir gently. Cover and cook until tender, about 5 minutes. Drain and serve.

Cocktail sauce: 1 cup LC catsup, 1.5 tsp. old bay seasoning, 1/2 tsp. prepared horseradish.

Chili, salt, garlic, vinegar, potassium sorbate, sodium bisulfite, xanthan gum

EASY Buffalo Chicken knock-off...

Boneless Chicken Breasts or Thighs
Prepared Ranch Dressing
Franks Hot Sauce

Season chicken with salt & pepper, then saute in a non-stick skillet til cooked through. Leave in Pan. Combine Ranch & Hot sauce in a separate bowl, (usually 2 parts Ranch to 1 part Hot sauce....depends on how spicey you like it) Pour over sauteed breasts and let the sauce GENTLY warm up. NOTE: Don't let the sauce heat too much or it will separate.

AWSOME Thread!.....I do the "Salsa Chicken" like Gibbs previously posted with Pork chops too!

I went out today and tried to find this at Walmart with no success.:( I was soooo looking forward to making that dish for dinner. Thanks for posting the picture LindaSue, at least now it will be easier to spot.

Good by itself, stuffed in a tomato, or over lettuce

I have several recipes - all very easy and most done by using the crockpot.

Creamy Chicken
1 bag - 2.5 to 3 lb bag of frozen chicken breasts
1 package cream cheese
2 can cream of chicken soup

Place all in crockpot and cook all day. Great over french style green beans or cauliflower.



Mexican Chicken
1 bag - 2.5 to 3 lb bag of frozen chicken breasts
1 package cream cheese
1 Jar (large) salsa

Place all in crockpot and cook all day.


Rotisserie Chicken (sp?)
1 whole chicken or 3 to 4 large chicken breasts with bones
Seasoning packet (powder) of your choice (I like the grill mates marinades, taco seasoning and good seasons italian salad dressing mix )

Place balls of aluminum foil on the bottom of the crockpot, spray well with cooking spray, rest chicken on top of foil balls, spinkle chicken with seasoning powder of you choice. Cook all day and presto - rotisserie chicken!!



Pasta Salad (Dreamfields pasta of course!)
1 lb package of dreamfield pasta cooked and drained (I like to use penne)
1 28oz can of tomatoes
1 package of good seasonings garlic and herb salad dressing mix

Prepare salad dressing mix according to package (add oil, vinegar and water). In medium size bowl combine this prepared dressing with the can of tomatoes (do not drain tomatoes). Mix well. Add this mixture in a large bowl with pasta. Eat warm or cold.

Ideas for leftovers of this pasta salad is to add cooked bulk sausage or diced chicken to make quick meal.
