I just found this thread too! Wow - what great ideas! I can't wait to try a few of them!
Here's one of my favorite staples, that I make over the weekend, then snack on all week long. It's from Dana Carpender's 500 Low Carb Recipes book: Joe (that's it - just "Joe") Hamburger chopped onions eggs Fresh spinach Brown hamburger with onions and seasonings. Drain (or not). Scramble in some eggs. When the eggs are done, throw in a whole bag of fresh baby spinach. Cook and stir until the spinach is wilted. That's it! Very easy, and yummy! Sometimes I'll sprinkle some parmesan and/or worchesteshire sauce on it before eating.

I thought i'd contribute. I've got two that are like THE EASIEST:
1 cup of chopped onion (this lazy cook buys it pre-chopped) Sautee in butter until soft Add 2 cans of Tuna and saute until tuna gets all crispy nummy. 1 cup of chopped onion (this lazy cook buys it pre-chopped) Sautee in butter until soft Add 1 can canned Roast Beef from Trader Joe's (I shred it with my fingers just break it up a little) sautee until roast beef gets all crispy nummy. You may want to add some butter after you've added the protein of your choice. This is great how it is but can be dressed up by adding sliced cherry tomatoes and/or mayo |

Cheesy chicken
4 boneless chicken breasts 1 cup parm cheese 1 cup Mayo Preheat oven to 350. Mix mayo and cheese together. Dredge chicken in mix and place in 9x13 pan. Pour remaining mix on top of chicken. Bake for about 30 minutes or until tops bubble up and brown |

Thrilled to find this recipe section!
I can't believe I didn't see this before. I so needed the simplicity of such recipes. I printed out a few this morning and am making "Diet Rite Cola Chicken" right now! So fast and easy. Exactly what I need as today I am back to Induction. Thank you all so much for doing this.

BUFFALO WINGS: Wings Frank's Hot Sauce Melted Butter Bake wings for an hour at 350, turning over halfway through. Mix equal parts Frank's and butter, and toss wings in the sauce. Add more Franks' if you like them hot. BLUE CHEESE DIP: 1/2 cup mayonnaise 1/2 cup sour cream 1/2 cup blue cheese crumbles. Whir it with a hand blender. Use it for crudités, or to dip the above posted buffalo wings. |

Hi
Cauli-Meat-Loaf nuke 1 head / half head of cauliflower Add butter (amt as u wish), salt, pepper and puree till smooth Stir fry ground beef / or any other ground meat / sausages, add salt, pepper to season Mix the above 2 items or layer them, as you wish. Put into loaf tin Beat 2 / 3 eggs and pour into meat / cauli mixture Optional : sprinkle some italian herbs mix / oregano, paprika and the likes.... Optional : Cheddar / mozarella cheese to top Bake for 30 mins at perhaps 350 degrees celcius. |
