I've been striking out w/getting coconut milk at a good price...all of our local groceries absolutely do not carry it. Guess it to the health food store to pay $1.59 a can!! I'll try and peek around at the dollar stores and Big Lots this week too...

I just made these. They are wickedly good!! Lemon Curd Recipe: 3 large eggs 1/3 cup fresh lemon juice (2-3 lemons) (do not use the bottled lemon juice) 1 tablespoon finely shredded lemon zest (optional) 3/4 cup sugar sub (I used 1/2 erythritol, 1/2 Xylitol - processed in a coffee grinder into a powder to aid in dissolving) 4 tablespoons CO at room temperature and cut into small pieces In a stainless steel bowl placed over a saucepan of simmering water, whisk together the eggs, sugar sub, and lemon juice until blended. Cook, stirring constantly (to prevent it from curdling), until the mixture becomes thick (like sour cream or a hollandaise sauce) . This will take approximately 10 minutes. Remove from heat and immediately pour through a fine strainer to remove any lumps. Cut the CO into small pieces and whisk into the mixture until the CO has melted. Add the lemon zest and let cool. The lemon curd will continue to thicken as it cools. Cover immediately (so a skin doesn't form). Crust: 1 cup Carbquik 4-6 TBSP cold CO or VCNO cut these together with a pastry cutter until crumbly. 2 TBSP cold water. Mix gently and press into a 9 x 9 pan. Bake at 350 until golden and remove from oven and cool. Pour lemon curd into crust. Top with whipped cream or powdered "sugar". Chill until firm.

HELP ME PLEASE!!! ANYONE!!!
Hi there,
Short and brief message. I am on day 16 of Atkins Induction. I have followed it faithfully. and not lost 1 lb. First week I was down 5. Next day up 6!!! Yesterday down 3 today back up to my normal weight. I heard on here that Coconut oil can boost my metabolism which is super slow. Not sure y as I work out and thyroid is normal!!! I am not discouraged tho but need a recipe for something I can take daily without fruit cuz I cannot have any yet. Something in the form of a drink, smoothie, that is yummy and low carb. Can someone offer me something. I have bought my virgin coconut oil and looked at the yummy recipes but I cannot have any of them yet.................. Help please and if anyone can offer any suggestions on what on earth is happening and I am not losing I would be so happy to hear from you. Thanks so much,,,,,,,, Tah for now, Emily ![]() |

Premium Coconut Vanilla Ice Cream
1 can coconut milk or cream 1/4 cup coconut oil 2 1/2 Tbs. Splenda Dash salt 1 egg, beaten 1 Tbs. vanilla Combine coconut milk, oil, Splenda, and salt in saucepan. Cook over medium heat, stirring occasionally until mixture almost boils. Reduce heat to low. In a bowl beat egg. Gradually stir about 1/2 cup of hot coconut milk into the beaten egg..Slowly stir this egg mixture into remaining hot coconut milk. Cook over low heat, stirring constantly until slightly thickened, about 2 to 3 minutes..Stir in vanilla..Remove from heat and let cool. Use the ice cream maker to finish..or use a blender..(see below) Blender method: Freeze the mixture in ice cube trays until it is mostly frozen..about 2 hours. You want the mixture to be about 32 degrees, but not frozen solid. Put the mixture into the blender and blend away. It should look like a thick milkshake..Eat immediately or pour the ice cream into an airtight container and freeze. For strawberry, etc. ice cream..You will use the basic recipe, but add more sweetener to taste..Then blend the 1 1/2 to 2 cups of fresh or frozen fruit in a blender with the cooled down mixture to mix well. I think I will use the expeller pressed coconut oil, so my vanilla tastes more like vanilla.. There would be 7 Tbs. of coconut oil in this recipe..3 for the milk, and 4 for the oil. |

White Hot Chocolate 2 Tbsp. Torani White Chocolate syrup dash of Cinnamon 1 cup Hood's Low Carb Milk ( I use Reduced Fat) 2 tsp or 1 T coconut oil Optional- 2T Designer Whey Protein (I use French Vanilla) Make sure it's all blended well- stir it like mad w/ fork or minature hand beater Heat in Microwave on high 1-2 minutes

Buffy45 -- it is my understanding that if you can get polyd to dissolve, that it doesn't get gritty again, but that it doesn't like to dissolve in fats. I don't know if you add any syrups to your bark, but -- if so -- you might try heating it in that first. Just a thought...

I've been using my EVCO for cauli-rice lately and it has been out of this world:
4 oz grated/shredded cauliflower 2 oz chopped mushrooms 1 oz chopped prosciutto salt and pepper to taste dash of butter extract Saute in 1 T. of EVCO until cauliflower begins to become just a bit transparent, about 3 minutes. OMG, I just had lunch and I can't wait to have it again! |

Here's something for those who eat LC bread in the morning:
Just wanted everyone to know that the best best toast is when I spread coconut oil liberally onto the bread before toasting. Great Toast!! Hmmmmm..I have a toaster oven which might work better in case the stuff flames up when it is in the regular toaster.. Anyone game to try it?? |

Impossibly Easy Coconut Milk Pie 8 servings....one serving equals 1 Tbs. of oil and approx. 200 calories 3/4 cup shredded unsweetened coconut (optional) 3/4 cup Splenda/or sweetener 1/2 cup Carbquik 3 Tbs. coconut oil one can of coconut milk 1 1/2 tsp. vanilla 4 eggs Heat oven to 350. Spray 9 inch pie plate. Stir all ingredients in a bowl until mixed well. Pour into pie pan. Bake 50-55 minutes or until knife inserted in the center comes out clean. Cool 5 minutes. You can serve this warm or refrigerate it right away. I had a piece for breakfast..It was very good.. Another one for those of you who want to drink your coconut..
