I love cutting them up into bite size pieces, dipping them in egg wash, rolling them in grated parmesan cheese, and frying them up. These are one of the favorite meals in my house!!!

I like doing mine this way also but sometimes vary it by rolling them in crushed pork skins and dipping them in some Frank's Hot Sauce and Butter, or Mayo & Mustard mixture for a Honey Mustard dipping sauce(although there is no honey lol).

I cook mine in olive oil with a little salsa and onion. Then when it's almost done, I throw shredded mozarella over it until melted. YUM!

Put in a baking dish - spoonful of tomato sauce on top - with parm cheese sprinkled on ........

Or,cut up pieces in olive oil with bacon and sautee - then remove from oil - add brocolli - and a little alfredo sauce -

I make Chicken Parmesan

Taking chicken and breading them with crushed pork rinds seasoned with italian seasonings and herbs, baking, then putting tbsp LC tomato sauce and topping with mozz. cheese

I also like it fried with parmesan cheese

Dip chicken pieces in heavy cream or butter, coat them with shredded and grated parmesan cheese and frying in olive oil and butter til crispy golden brown and cooked thru.

For general purposes, I bake chicken breasts coated with LC italian dressing or olive oil and garlic powder and I have chicken for a few days for salads, plain, or cut up in casseroles.

My mom's all time best recipe is to cut a chicken breast in half to make a pocket. Fill middle with white american cheese. Wrap each piece of chicken with 1-2 raw bacon strips and fry in butter and olive oil until done all the way thru. WOW its YUMMY

Put in a baking dish and spoon mayo on top. Sprinkle with paprika and bake until chicken is done. Looks yucky but tastes very yummy.

Coat with mayo, then roll in a mixture of half spicy pork rinds, crushed, and half parmesan cheese (the green can kind) and bake at 400* til done, about 25 minutes or so. They are deelish!

Also, just garlic salt and cooking in the George Foreman grill turns out some mighty tasty chicken. Just don't overcook it.

I have the EASIEST and BEST recipe for boring chicken breasts.
!!

Smoosh together some feta and chopped black olives, add a wee bit of garlic.

Grill a chicken breast and just before it is done add the feta/olive mixture and let it melt.

I do this on my gas grill, but I bet it would be good inside too.


BTW -this is also superb on PORK or LAMB!!!!!!!!!!!

Easy, yummy and quick!!

I like to cut chicken into cubes and heat up one of the Bertolli cream sauces or Ragu double cheddar sauce. Both come in jars and are 3 grams carb per 1/4 cup. Then I add sauteed onion or scallion and sometimes crumbled up bacon. Salt and pepper to taste.

I just used one of the ideas above, modified it just slightly and YUM, it was great!

I cut the chicken breasts into cubes. Tossed them with one egg and a bit of water. Then coated them with a combo of crushed plain pork rinds and grated parmesan cheese, plus a bit of salt and pepper. Sauteed them in olive oil. It was sooo yummy!! I wonder if I could have baked them for a similar outcome? That way, saving calories on oil. In any case, it was just great! Plain chicken can get boring - love some new ideas!!

I make curry chicken alot. (Similiar to thai or indian style).

I use 1/3 cup coconut milk, sautee it with red chili paste, then add a can of green beans. Also I spice it with hot redpepper, a little lemongrass and a dash of splenda or sweetnlow.

WHile thats simmering on low I then chop up my chicken breast into pieces..sautee them in another frying pan in a little olive oil..then when theyre almost done I throw them into the curry mix. Let it simmer together with a cover on it for about 5-8 minutes.

YUMMMM!!!!!!!!!

Pound boneless Chx breast flat. Top with a tsp. of mayo and sprinkle with bleu cheese and roll up. Put in baking dish and bake in oven. Pour on Franks hot sauce mixed with melted butter. Yummieeeee. Serve with celery sticks and a side of bleu cheese dressing or ranch. Add a salad and you have a quick dinner. :shake:

I like to take the chicken breasts, chop them up into bite sized pieces, brown them in a frying pan, then toss in some frozen (thawed in water while meat's cooking) broccoli, toss in some Carb Options cheese sauce or alfredo sauce, and VOILA! a delicious, quick & easy meal! MMMM! (I think I might have to make that tomorrow night now!)

Ingredients:
1/2 cup butter
1/2 cup olive oil
1 tsp dried parsley
1 tsp dried basil
1/4 tsp dried oregano
3 cloves garlic, minced
3/4 tsp salt
1 T. lemon juice
4 boneless chicken breast halves, sliced lengthwise into thirds

Directions:
In a skillet heat the butter and oil over medium high until the butter melts. Add the parsley, basil, oregano, garlic and salt and mix together in the skillet. Stir in lemon juice.
Then add the chicken and saute for about 3 minutes or until white. Lower the heat (medium-ish) and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter can be added if needed.

I like to put chicken in salad.
Grill the chicken,add a tbsp or so of cheese, 3 tbsp of crispy crumbled bacon,1 chopped egg,lettuce,tomato,2-3 olives.OR try
chicken,peppers,tomato,cheese,sourcream,and fajita sauce for a fajita salad.

We cut chicken breast into bite sized pieces, sprinkle with salt, pepper, and garlic powder, and saute it with a little onion or scallions in butter until done. Top with a little ranch dressing. We have also used left over chicken or turkey to do this. Just saute the onions until nearly done first then add the already cooked chicken. You can wrap in LC tortillas, and use either ranch or picante sauce, but I like it just plain with the ranch dressing the best.

Ok I made something intersting tonite based on one of your recipes.

I took 2 boneless chicken breasts, defrosted them. Then cooked them in olive oil in a pan for about 5 minutes to soften them. Then I cut them up into bitesized pieces. Dipped them in egg then a mixture of parmesan cheese, zero carb bake mix and italian spices. Then I put them back in the frying pan with more olive oil.

They turned out great as far ass taste goes BUT they fell apart:( (They were sorta crumbly). They did NOT turn out like crispy 'nuggets" at all.

Anyone have any suggestions??:eek: :eek:

I take bite-size chicken, roll in egg, roll in parmesean/almond or hazelnut 'flour' (ground nuts from Trader Joe's), sautee in olive oil and butter. Do the same with sliced zuchinni.

My contribution-

Enchilada Style

Cook Chicken breast in a skillet with some oil and water and chop into pieces. Place back in skillet and top with 2-3 Tablespoons of Red enchilada sauce

(get the one that's 3 net carbs for a 1/4 cup, then it's only like 1 or 2 carbs for a couple of Tablespoons!)

Top with shredded Mozzarella and cook over low heat until cheese melts!

I have to say that this thread has helped me, too! I have had chicken breasts three nights in a row but am not bored yet! LOL

Hmmm, a sticky would be nice...especially if we can get more people to put their ideas here.
