I wanted to start by saying the best frozen boneless, skinless chicken breasts by far are the Tyson ones (6.5 lbs) I've found at Sam's (about $12.00). They're 99% fat free (I hate pulling fat off skinless breasts.)

The two recipes I make the most are also the easiest:

1) Blue Cheese Chicken: Take boneless, skinless chicken breasts (fresh or frozen) and top with prepared blue cheese or feta cheese dressing. Squeeze some fresh lemon on top and top with fresh pepper. Bake for 25 - 35 minutes (longer if frozen) at 375 degrees. You can also top with crumbled feta or any other shredded cheese during the last fifteen minutes of baking. You can also add veggies (onions, squash, broccoli, cauliflower, mushrooms, etc.) The dressing makes the best sauce!

2) Chinese Mushroom Chicken: Lightly dip boneless, skinless chicken breasts (again, fresh or frozen) in almond flour or cornstarch (you can also put them first in an egg wash if you like). Saute quickly on both sides until brown in oil. (A mixture of peanut and sesame oil is terrific, but any kind will work. You can also use butter.) Add any kind of mushrooms (I use straw, but sliced white ones work well too) and continue cooking for a few minutes. Pour in about 1/2 cup soy sauce, the juice of one lemon, ginger, and a little white wine. Cook for ten minutes on low heat. Yummy!

slice a skinless boneless breast into about 4 or 5 pieces. Marinate over night in Franks(or other hot sauce) pan saute.. Coat cooked chicken with additional franks if desired.

Yummy, spicy.. just like buffalo wings WITHOUT all the fat

Chicken Califlower Casserole
3 chicken breast browned in olive oil, cut into small pieces..set aside.
Microwave sm. bag of frozen califlower until done and drain off water.
Add 1/2 stick of butter (not marg.),2Tps. of sour cream, 1 cup of Sreddred Cheddar cheese, salt to taste, and 1Tps. of Mrs. Dash. Mix and add chicken pieces and top with extra cheese for topping...mmmm good...

LC Smokey Mountain Chicken

Smokey Mt Chicken

Boneless Skinless Chic Breasts
Low Carb BQ Sauce (I use Carb Options)
Cheddar Cheese (or mozzeralla)
Bacon (fried)
Ham

I grill my chicken on the grill till done, then I top it with low carb BQ sauce, a slice of ham, couple slices of bacon (fried up), then top with cheddar cheese (or mozz.) I pop in microwave to melt cheese. And ta-da! You have low carb smokey mountain chicken!

This is one of my favorite ways to do with Chicken.

I love this thread, cause I am not a big "red meat" eater, so I sure do consume alot of chicken on Atkins....LOL!

Wish I had read this thread earlier before eating a boring ol' piece of chicken.

I am reminded of a recipe I saw in a magazine. The combination of ingredients was so strange to me that I just had to try it. It turned out deeee-lish.

chicken
peanut butter(i think it called for 1/4 cup)
can of tomatoes with chilies

Throw it all in a slow cooker for a couple of hours and voila! The pnut butter and tomatoes thicken up into a nice tangy sauce.

I saw it too only it had 1 tsp. ginger and 1 tbl soy sauce and when served top with chopped peanuts if desired. It was good!

Chicken Pizziola

Bang out a chicken breast so it's flat. Spread your favourite pizza sauce over it (or just good ole tomato paste). Bake this in the oven. Mix together your favourite pizza topping (cheese, oregano, ham, tomato). Spread over top of cooked chicken and put on grill until cheese is bubbly and brown.

egg wash - beat a whole egg lightly with a fork... use that to dip things in to help crumbs etc to "stick"

A recipe for the crockpot:

Creamy, Cheesy, Italian Chicken Breasts

4 - 6 bonless, skinless chicken breasts (starting with frozen is fine)
1 cup bottled Italian oil/vinegar style dressing
1/2 cup sourcream
1/4 cup grated parmesan (green can stuff is fine)

Put a thin layer of dressing on the bottom of the crockpot. Add the frozen chicken breasts. Pour remaining dressing over chicken. Cook on low 8 hours. Remove chicken from the crockpot. Add sourcream and parmesan to hot dressing/juices, mix well.

The sauce can be spooned over chicken and a hot vegetable, such as broccoli, that has been steamed in the microwave for a quick lowcarb meal.

Another crockpot recipe:

Chicken/Peppers/Salsa

6 frozen skinless/bonless chicken breasts (YES - frozen!)
1 small jar of your favorite salsa
1 green bell pepper, sliced in rings
Sliced onion if desired

Layer ingredients beginning with a little salsa in the crockpot.
Cook on low for 8 hours.

This would be good served with some shredded cheese and a dollop of sourcream. It would also be a good filling for lowcarb tortillas.

I've recently discovered that mixing half Atkins corn muffin mix, dry, with half Carbalose flour, makes an EXCELLENT breading! Did it with catfish a week or two back, and tonight, did a cut up chicken, but you could use just the breasts if you wanted.

I brined the chicken first (1 quart water, 1/3 cup salt, pour over chicken and cover in fridge for several hours, drain well) then season it with my Cajun spice mix (garlic salt, onion powder, dried crumbled oregano, chile powder, paprika) and then dredge it well in the breading mix. Fry in about 1/2" hot oil for 12 minutes per side. Don't overcrowd the pan and keep the temp about 325*. I use expeller-pressed coconut oil or lard to fry stuff.

When done frying, place on a rack over a cookie sheet and into a 300* oven til everything is fried - this also helps cook through the breasts, you can cut into the thickest one or check with a meat thermometer to verify that it's done.

This made the tastiest, crispiest, juiciest, most tender fried chicken I've ever eaten!

Last night I took some baked chicken breasts and put them in a skillet and covered them with my homemade pizza sauce and heated until it was warmed up and then added some mozzarella and parmesan and covered them until the cheese melted. Sort of like a fast way to make chicken cacciatore, but it was good and a nice change of pace.

Mexican Chicken Casserole

5 boneless skinless chicken breasts, browned and chopped
1 can Cream of Chicken soup (I use Chicken Verde)
2 cups shredded cheddar
3/4 can green enchilada sauce
1/2 cup sour cream
3-4 LC tortillas cut into inch size pieces

Mix soup, cheese, enchilada sauce, sour cream in a saucepan. Heat until melted. Add chicken.

Dump the whole thing into a casserole dish and top with LC tortilla pieces.

Baek uncovered for 30 min in a 350 degree oven or until bubbly and the tortillas are crisp.

Great reheated too!

Sure! It's very simple, but I don't measure anything, I just kinda dump til it looks right.

I take a large can of Hunt's Spaghetti Mushroom Sauce and add in some Italian Seasoning, onion powder (can use dried onions), lots of oregano and some parmesan cheese, a little bit of black pepper, small bit of thyme and some ground sage.

I don't cook it or anything. Just mix it all up in a bowl until it's well blended and then put it on the pizza. It makes the best sauce.

You could add garlic powder to it if you wanted, but I'm allergic to garlic so I don't use it. If I could eat it, I would definitely put in some garlic powder to "kick" it up a notch.

Note: For the parmesan, I used the Kraft can kind and just put enough in until it thickens up the sauce a bit (or til it looks right for spreading).

This sounds like what I used to do to chicken nuggets to get my son to eat them. We called it pizza-chicken.

Famous Creamy Chicken ♥


1 tablespoon olive oil
6 medium boneless chicken breasts, pounded 1/2" thick
2 tablespoons butter
1 clove garlic, minced
1 pearl onion, minced
1 cup chicken broth
1/2 cup dry white wine
1 package Hollandaise sauce mix
2 tablespoons fresh parsley, chopped
1/2 cup skim milk
salt & pepper



In a large, deep saucepan, add olive oil over medium heat. Add chicken breasts and cook 7-8
minutes each side, or until center is white. Remove chicken and set aside. Add butter, garlic
and onion to pan. Cook 2-3 minutes. Reduce heat to med-low, and add chicken broth and wine.
Whisk in Hollandaise mix and parsley. Stir in milk and cook sauce until thick, about 5 minutes
on low heat, stirring constantly. Add chicken back into sauce, cook 2 additional minutes and
serve immediately.
Yield: 6 Servings.

Amount per serving: Calories 357.89, Total Fat 9.68 g, Saturated Fat 3.6 g, Carbohydrates 4.31
g, Dietary Fiber 0.14 g, Net Carbohydrates 4.18 g, and Protein 56.72 g.

I make a dredging "flour" using dried mushrooms (use my blender to turn the mushrooms into flour consistency), add some spices such as basil, garlic powder, tarragon and toss with chicken to coat. Bake. Voila - Oven "fried" chicken.
