Salsa Chicken
Hi -
I just came across this thread while looking for something else to do with chicken today! Here is one of my favorites: Salsa Chicken Place chicken breasts (I even leave mine frozen) in Casserole dish. Pour your favorite salsa liberally over the chicken. Cover with shredded cheddar cheese. Bake at 350 until done (takes about 30 mins for thawed, 60+ mins for frozen chicken - the more chicken, the longer the bake time). Serve with sour cream. We also like to slice the chicken and eat it with the sauce and sour cream in lc flour tortillas. So yummy and easy! Off to cook my chicken today! Stephany Seattle

One of my favs for boneless skinless chicken breasts is this simple method:
Pound chix breasts flat with meat mallet. Put 1 oz. cream cheese inside each chix breast. On top of cream cheese, you can add the following: bacon bits OR chives and minced dried onion OR italian seasoning OR 1/2 tsp. packaged ranch dressing mix(sprinkle over cream cheese) Roll chix breast up (with filling inside), and place in baking pan with sides. Brush each breast with some melted butter, then sprinkle with seasoned salt or salt and pepper or whatever seasonings you desire. Pop in a 350 oven for 35 to 45 minutes.

Buffao chicken Rolls
4 skinless boneless chicken breasts pounded to 1/4 inche thickness 4 tbs butter 1/2 cup Franks hot sauce 1/2 cup shredded provolone cheese In a small bowl, stir together the melted butter and hot sauce. Place chicken breasts in a glass bowl, and pour the sauce over. turn to coat, cover and refrigerate for 15-30 minutes. Preheat the oven to 400 degrees. Take chicken out of hot sauce, put cheese in center and roll up. use a tooth pick to secure. Place them seam side down in a glass baking dish. Cover and bake for 30 minutes or until chicken is fork tender. Increase the temp to 450 degrees and place the chicken 8 inches from heat. Uncover and bake for 5 minutes until browned Garnish with remaining cheese and serve with ranch or blue cheese dressing. |

Similar to Buffalo wings. If you dip the cooked chicken breast chunks in egg first, then fry it, then toss with the sauce... Buffalo "wings"

How about Mock Abalone
Pound chicken breasts then soak in clam juice for 36 hours (yes that's essential) Drain. Dip each in egg and coat with plain Keto Crumbs or Carbquik and fry lightly in butter. There was a restaurant that got busted for serving Abalone and it was this chicken. The original recipe calls for flour, but I would substitute Keto Crumbs or Carbquik for a low carb version. |

Well, that's hard for me to say, as I can eat the spiciest food available, but my DH eats them and loves them.
The cheese cuts the spice. If you don't love spicy, only soak them for 15 minutes. I think Durkee is less spicy than some of the others. Julie |

CREAMY LEMON PEPPER CHICKEN
I just made this... it's getting rave reviews... 4 boneless chicken breasts or 8-10 cutlets Pound them thin (preferable but not necessary) Dredge in Carbquik or or Bake Mix Lay in a buttered baking dish Liberally sprinkle black pepper over tops of chicken Bake at 375 for 35 minutes SAUCE: 1 Stick of Butter 1/4 cup heavy cream 1 tsp of garlic powder 1 tsp of onion powder pinch of salt 1 tsp of black pepper 1/4 cup lemon juice 1 tsp of granular splenda (Or sweetening equivilent) Pour over baked chicken

This is my favorite thing to do with chicken breast:
Try cooking your chicken in a hot non-stick pan until golden and then add this dressing over and cook for just a bit longer: The Mustard Seed's Ginger Dressing: 1 cup vegetable oil 2 1/2 tablespoons minced and peeled ginger root 1/2 teaspoon sugar (I used diabetisweet) 1/4 cup sesame seeds, toasted* 1/8 teaspoon celery seed 1 teaspoon ketchup (use sugar free if you want but at this amount it doesn't matter too much. You can also skip it if you want) Pinch white pepper (or black if you don't have white) 1/4 cup chopped onion 1 1/2 tablespoon soy sauce 1/3 cup distilled white vinegar *Roast the seeds in a dry frying pan over med heat until just turning color - stir constantly - and until they start to smell yummy) Using a blender or food processor, combine all ingredients except the soy sauce and vinegar. Blend for 1 minute or until creamy and completely blended. Then add the soy sauce and vinegar and blend for 30 more seconds. Store in the refrigerator for up to a month.

Made a really good chicken dish tonight...
3 boneless skinless chicken breasts, defrosted Dice up and cook in olive oil with some Perfect spice blend for poultry or whatever spices you like on your chicken... when chicken is no longer pink, add 1 bag of frozen summer squash slices, cook until tender. Add 2/3 cup cheddar cheese and 1/2 cup sour cream, mix until melted. Enjoy. |

Easy and Yummy
I haven't read this entire thread and do not know if I am duplicating someone. But I LOVE curry of all kinds and I take a few chicken breasts and a can of coconut milk with a few tablespoons of red thai curry, bake for 30 min at 350 and Yum!
This comes out spicy, but you can use less paste if you don't like it too hot. That is my base recipe. I put it in a large container in the fridge. I make alot and eat on it through the week. Here are the variations I take out some sauce 1/4 cup add a few teaspoons of peanut butter and a little grandular splenda, heat and drizzel over on of the chicken breasts (I usually can't eat a whole breast I eat a half) This is so simular to Pad Thai I eat this over cauliflower rice or somethines by it self. I also will make egg salad and take some sauce out to flavor it. I have also done this with tuna I also add the sauce to scrabled eggs I haven't eaten it over dreamfeilds but I bet it would be yummy. When preparing your chicken dinner, throw on a couple of extra pieces for this delicious chicken salad.
Chicken Salad Recipe By : Serving Size : 4 -------- ------------ -------------------------------- 13 ounces chicken breast, cooked -shredded 1 stalk celery -- diced 8 whole black olives 3 tablespoons mayonnaise 3 tablespoons sour cream 2 1/2 teaspoons dried onion -- or green, fresh diced salt and pepper -- to taste Mix and let set for several hours to blend flavors. Serve plain or use a slice of LC bread or tortilla. (You can use canned chicken in a pinch and it's still great.) - - - - - - - - - - - - - - - - - - - Any leftovers? -- make a double batch Take a cup or two of the chicken salad and add to your favorite coleslaw recipe. Add about ΒΌ cup peanuts along with the chicken salad for an extra special treat. This is soo good. I love having this for a quick lunch. b |

-------------------------------------------------------------------------------- Serves 2 (but can easily be doubled) Ingredients: 2 boneless, skinless chicken breasts 2 oz. cream cheese, softened (I used whipped cream cheese) 1 cup mozzerella cheese 1/4 cup fresh spinach leaves 1/2 tsp oregano 1/4 garlic salt 1/2 garlic powder 1/2 cup tomato sauce (I use Hunts no sugar added and season it myself) Preheat oven to 400 degrees 1. Pound chicken breast until very thin (about 1/4 inch) 2. Lay spinach over chicken 3. Combine cream cheese, 1/2 of the mozz cheese, and spices in a bowl. 4. Divide mixture evenly and place on top of the spinach on each chicken breast. (Should be about a 1 oz. ball of mixture, place towards the short end of the chicken) 5. Roll up each chicken tightly, starting from the end with the filling. 6. Place in a greast baking dish and cover evenly with sauce. 7. Cover dish with foil and bake for 30 minutes. 8. Remove foil, top chicken with remaining cheese and bake for an additional 3-5 minutes until the cheese melts. This is definetly my favorite dinner to make, it so easy and unbelivably delicious! Looks like fairly ordinary when you pull it out of the even (although beautiful nonetheless), but when you cut the chicken in half, SURPRISE! ![]() The cheese oozes out and it looks really amazing. I always make this for guests and its a huge hit. |

I should also add that while this is cooking in the oven, some of the cheese leaks out of the chicken and mixes with the tomato sauce, creating its very own creamy alfredo-like sauce while it bakes! Serve with a veggie, I usually use brocolli, and pour the extra "sauce" over. It's truly delicious!

Garlic Lime Chicken: (easy, fast and tasty with ingredients most of us have around all the time!) 1 tsp salt 3/4 tsp pepper 1/4 tsp cayenne pepper 1/4 tsp paprika 1 tsp garlic powder 1/2 tsp onion powder 1/2 tsp thyme 6 boneless, skinless chicken breast halves 2 tbs butter 2 tbs olive oil 4 tbs lime juice 1/2 cup chicken broth On a dinner plate, mix together first seven ingredients. Sprinkle mixture on both sides of chicken breasts. In a skillet heat butter and olive oil together over medium high heat. Cook chicken until golden brown, about 5 minutes on each side. Remove chicken and add lime juice and chicken broth to the pan, whisking up the browned bits off the bottom of the pan. Keep cooking until the sauce has reduced slightly. Add chicken back to the pan to thoroughly coat and serve per serving: 343 calories, 11g fat, 55 g protein, 2 g carbohydrate, trace fiber, 147 mg cholesterol, 612 mg sodium |
