Vonny girl, Sponge Bob said if you beat the mixture to much that the eggs would do weird things. So that is what happen I think.

I beat my eggs in my magic bullet along with the other liquid ingredients. This prevents the stringy, nasty egg thing.

Also, last night I made the flaxbread and forgot to add banana extract. I used the banana Davinci syrup but it wasn't nearly as good this time without the extract too. I could hardly taste the banana flavoring without it.

Finally made this bread and we are sure glad I did!

I used 1 C Flax meal and 1 C almond meal (1 C Pecans).

12 T butter, instead of the SF syrup and oil.

It was an awesome BUTTER PECAN BREAD

Yummy-warm from oven, plain.
Great w/SF strawberry jam.

So, did you only use those three ingredients? What temp and for how long? I'm trying to stay away from artificial sweeteners so thanks for the update.

Grammy G: I used spongebob's original recipe (1st post). So, everything was the same as original recipe, except for (my) almond meal and butter substitutions.

1/2 C Splenda used. *However, I think it could be omitted and the bread would still be good (just without the sweetness).

HTH

Stats: Type 2 Diabetic as of 6/1/08
WOE: LC
Start Date: Restart 6/1/08
Made this today with the following changes or subs.
I had 1 3/4 cup flaxmeal, made up the rest with almond flour
I used 1 cup of black walnuts for the nuts
I omitted the granular splenda and added 1 t liquid splenda
I used banana SF Davinci and added 1 t banana extract. Next time I will add 2 t.
Baked 40 minutes to make sure it was dry enough.
It is excellent. Just had a piece warm out of the oven with butter.

Okay, after making this bread several different times, several different ways...
We've found our favorite:

SpongeBob's recipe just as it is, omitting the oil. No need for it!
*Pecans are our favorite nut inside

Okay, my final favorite: Spongebob's recipe (but-no Splenda, no oil) and 1 C SF Syrup!
I bake it for 45 minutes and it's perfectly sweet and has great taste and texture.
I make it every week and we LOVE it

momov2boys, what do you mean exactly when you say "1 C SF Syrup"?
Does it have a flavor?

I have trouble with getting this sweet enough. The batter always tastes so much better. It's good, but the sweet aftertaste is strong than the sweet taste of the muffin.

I usually use 4-5 drops liquid splenda and 2 t eryhritol, maybe with 2 T sf syrup. Thoughts?

This is too delicious! Perfect toasted with almond butter. Glad I only made half of a recipe.

Tweaked it with hazelnut oil, and pecan flour instead of the chopped nuts. Used 1T of xylitol and 4 packets of steviaplus, along with some allspice and sea salt. De-lish!

I made the chocolate version last night again and only used 3 eggs. It was fine! I may cut back on the Splenda next time, it was sweeter than I remembered it.

5cats4me, thanks for reviving this thread! I had just tried and posted an apple flax muffin recipe, but hadn't seen this thread yet. These look great and even lower carb than the apple recipe.

Have a great day!

WOE: just keeping it on the low down >50 carbs per day
Start Date: start 2001 restarted a few times since hehe
i like mine a little denser, so i only use 3 eggs, 1 stick of butter (you can still use oil, but the butter gives it a nice flavor) 1 1/2 cups of flax and 1/2 to 1/3 cup of carbquick or almond flour.

I get the yummo blueberries from target, they are huge berries and i add an extra tbsp or 2 of blueberry syrup and top with a litte acek on top.

I've also added chocolate syrup, 1 1/2 tbsp of cocoa powder and some of the horded sf chocolate chips and pecans, both are yummy!

I also love gingerbread (i use extra syrup, 2 tbsp) and walnuts, cinnamon and nutmeg (or pumpkin spice) and top with sf brown sugar...

I call this my poopoo bread at work everyone who's tried it has loved it too lol!
