I think it would be awesome to have a link of crockpot only recipes for the Medi Weightloss Acute Phase. Can anyone supply some recipes? I know there are a few in the recipe section but it is cumbersome to look through page after page to find them. Will any of you share?
I would LOVE to use the crockpot and make my life a little easier!:sad:

I was hoping you were sharing some when I saw the thread! :)

The only thing I've done in my crockpot lately is an old family favorite -- Pull-Aparts.
Beef Roast
1-2 cups water
1 envelope Lipton soup mix (beef/onion or something similar)
1-2 beef boullion cubes
Put everything in and cook for a few hours. Use a fork to start pulling the meat apart. Cook some more. Pull some more. Add water if you need to. It's super tender when it's done.

Traditionally, you serve the meat on a hamburger bun with condiments (relish, pickles, mustard, ketchup, etc.). So I like that I can eat my meat without a bun and the rest of the family can use a bun if they want.

A quick one is Chicken breasts and salsa ( and any other spices that you like i.e. cumin, chili powder etc.). Just let it cook. It makes delicious chicken tacos for the family with all the fixins and I eat mine plain with just a little greek yogurt to replace the sour cream or add it to lettuce for a salad. I actually have several recipes for the slow cooker. I will continue to add as I have time.

I made a few soups that could be made in the crockpot.

Beef and vegetable soup

1 tbsp olive oil (Extra Virgin)
1/2 medium onion, chopped
2-4 cloves garlic, chopped finely (depends on your tastes - I always put more)
2 stalks celery, chopped
1 lb lean stew meat (I cut mine into smaller pieces and trim the fat because I don't like it)
fresh green beans, trimmed and cut into smaller pieces
1/2 bag of shreedded cabbage
sea salt
pepper to taste
1 quart beef stock (or homemade stock) low sodium

I get the crock pot hot, then add the olive oil, onions, garlic, and celery and let them sweat for a few minutes. I usually add some salt at this stage to help sweating. When soft, add meat and cook through - get some brown color if you can. Add green beans and let cook a few minutes. Add beef stock, cabbage, and salt and pepper to taste.

You can also add one tomato and one carrot if you are allowed to have them.

Medi Tuscan Chicken Soup

Chicken, breast or thighs
1 tbsp EVOO
1/2 medium onion, chopped
1 small shallot, chopped finely (if you have it on hand)
2-4 cloves garlic, chopped finely
6 oz mushrooms, chopped (about 3/4 of the package)
1 tbsp carrots (if you can have them)
2 stalks celery
green beans, trimmed and cut into pieces
4 cups chicken stock (or homemade) low sodium.
2 cups fresh baby spinach
2 cups kale, chopped
(you can use any green here - this is just what I had on hand)
1 tsp dried oregano
1 tsp dried basil
sea salt and pepper to taste
2 slices cooked crisp bacon
Parmesan cheese, shredded (if you can have)

You can use a precooked rotisserie chicken for this. If you have raw, roast chicken in olive oil and whatever spices you like. I roasted 1 breast and 3 thighs for 45 mins, covered in a 350 degree oven. Let cool. Cut into small pieces.

Add EVOO, onions, garlic, celery, mushrooms, (carrots) and green beans to pot with some salt to sweat/cook. Add everything else, but bacon and cheese. Top with bacon and cheese when serving.

I don't have the calorie breakdowns...sorry.

Thanks. I adapted it from a recipe that had white beans in it (which would be delicious :laugh: ). I just try to add as many veggies as possible. I'm not a big salad person, so a soup is a good way to get them in. The beef and veggie soup is actually really flavorful and good.

I also have a recipe for a cauliflower vichyssoise somewhere. I haven't made it yet. I'll make it before I share it. ;)

Oh, and I got some celery root in my co-op basket and found a celery root/apple soup recipe. I am curious about it. I'll make that one too before I share. :laugh:

I was wondering what some seasoned chix breast and some laughing cow and rotel might taste like. I am a terrible cook exceot for VERY high fat stuff:(

I was also thinking that you could make taco soup without the beans (if you can have tomatoes).

Taco Soup

1 lb lean ground beef
1/2 onion, chopped
2-4 cloves garlic, chopped finely
15 oz can diced tomatoes
1 small can of diced chiles
(I used to add corn and beans, but those are out)
1 tbsp chili powder
1 tbsp cumin
1 tsp paprika
salt pepper to taste

Throw in onions, garlic and beef until cooked. Add rest of the ingredients. You might have to add some stock if you will be cooking all day while you are gone. Usually the tomatoes have enough wetness.

Serve with guacamole or cut up avocado and chopped green onions (scallions). If you can have cheese or sour cream, you can add some on top. (usual version also served with crushed corn chips).

That might not be bad. There is a recipe floating around this site for like a cabbage and laughing cow thing. I haven't paid attention because I don't love the laughing cow cheeses. I like the baby gels, but not the soft cheese as much.

I think you could melt the cheese with the rotel - even in the microwave (I'm thinking like velveeta and salsa) and add it on top of your chicken breast. Maybe put some avocado on top too. Cook your chicken with chili powder and cumin. Mmmmm.
