WOE: Low carb aim for 50g carbs daily max

I try to shop the special offers and stash them in the chest freezer under the stairs. It's about half full at the moment with fish, duck legs and veal mince. I get stuff out 24 hrs in advance to defrost in the fridge and then we decide what to do with it depending on what else we have. Last night for example OH put a bit of olive oil in a baking dish and put in baby leeks and asparagus. Mixed some grated Cheddar with half a packet of roasted salted mixed nuts pounded in mortar & pestle and topped them with it. Bunged in the oven and that was our side dish. Crunchy yummy

Tuesday - Chicken pot pie (didn't make this last week)

Homemade dough (makes 2 thick crust) $0.50

onion(1/2) & green peppers(1/2) $0.50
2 egg, 4 oz cream cheese & parm cheese $0.80

Saturday -Rosemary pork loin

Fried potatoes (6 potatoes) $0.92
cinnamon apples (1/2 bag of apples) $1.00

When I read this menu, I see what looks like a lot of carbs. Would you mind sharing which program you follow. I see that you are also feeding DH and realize he may be skinny - most guys have it made . . . so frustrating! Gotta' love 'em though. Are you using LC noodles? Splenda? Very curious . . . you seem to eat very well. ~ dew

Hi,

We are both doing Atkins, but the kids are not. The breads, rice and noodles are for them only. Hubby and I have eggs and bacon for breakfast, chicken salad, tuna salad, deviled eggs or leftover meats for lunches and meats and side salad at just about every dinner. Hubby is only 5'8" and in great shape (ex-marine), but wants to keep it that way. I, on the other hand, could lose weight and I'm trying. I don't eat processed foods so no LC noodles or anything for me. Just off the land basics. I might mess up from time to time, but really try hard It's just so much better for your body.

Todays menu:
B - 2 eggs, 2 pcs bacon
L - 1 chicken leg (maybe a 1 cup side salad if I am really hungry)
D - 1 cup green beans, 1 chicken leg
S - coffee, Hwc, splenda (trying to get rid of the splenda)

I did have something else planned for dinner as you can see from the menu, but we have so many leftovers tonight will change to fend for yourself Hope that helps and answers your questions.

It does indeed. I try to avoid processed too. My kids and g-kids eat horribly. I know they know that almost to a T, all the gene pools involved have a strong tendency to diabetes. I am Type 2. The best thing I ever did for myself was to stop Noodling! I will not go to Olive Garden (AKA the Noodle House). I don't hesitate to throw the bread from a sandwich away.

Have you tried Stevia? I have some in the cupboard but always reach for the Splenda.

Now that I understand all the carbs in your menu, it's a great idea for people to see how you can feed a whole family when not everyone eats LC. Being a great granny, I usually eat alone.

Hi,
No I haven't tried Stevia. Does it taste the same as splenda? I do need to try and get rid of that stuff. I use it for my coffee in the am and pm. Hubby wants to use honey instead, but worried about that with the Atkins. It is all natural though. I loved you calling the Olive Garden "Noodle house" got a laugh, thank you. As far as the kids go, they love fruits and veggies, so we do eat those a lot. Mostly for lunches, snacks and side dishes, so most of the carby stuff is bread, rice & noodles are for dinners for them. Well and of course some dessert My mom has diabetes. Her is from not ever eating right. My sisters are obese as well. I refuse to get like that so I try to keep as healthly as I can. It does get me mad when people, mostly my family, tells me it's my genetics. BS......I work my butt off to keep thin and health and that means not eating the donuts Oh well can only deal with me and my family or I will lose my mind.......
