Hi all, Lots over leftovers The whole week is pretty much leftovers. I am not running out to the store at all, just using what's at home. Tried my best with prices. Have a great week and enjoy your family.

I try not to waste any leftovers to save $. So if we have some meat or veggies left over I turn them into LC soup. I buy chicken and beef broth when it's buy 1 get 1 and keep a big supply of it. I LOVE leftover soup! I sometimes add a little half and half to make it a creamy soup. I love to make a mexican version by pan frying some jalepenos and chopping them up and adding them to the broth along with some mexican spices. THen a little grated monterey jack on top... yum. You can make any type soup you can imagine, and it's ecomomical cause u r using what you were going to throw out anyway!

Good for you I think I will try to incorpated a soup through the winter every week to 2 weeks. It's just cheap, healthy, LC, and yummy.

Hello, Hope everybody had a great holiday My boys are eating everything and it's driving me nuts. All my leftovers I need for other meals aren't leftovers anymore So I had to pull out another Ham from the freezer ($8.10) and made it instead of the beef barely stew. I have enough leftovers for 2 meals now ( I hope). Might have to rethink the chicken breast as well. One isn't going to fill up teen boys and they run $.92 each. Anyway here is what I have come up with for next week. Hope you all have a great week.

January 2 - January 8

CHERI'S CREAMY SOUTHWESTERN TACO SOUP
1 pound ground beef
2 3/4 ounces onion, chopped, 1/2 cup
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 cans beef broth
1/2 cup heavy cream
2 teaspoons salt, or to taste

In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through.

Makes 8 cups or 6-8 servings
Freezing not recommended

Per 1/6 Recipe: 361 Calories; 29g Fat; 18g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs

Good morning, My goal for the next 2 weeks is to live off of everything in the house. We just went major shopping and bought tons of things so we should be good for awhile. I put $35 off to the side for misc items like more eggs when needed. Trying to keep my food budget at $600 this month for the 6 of us. Wish me luck

Hi,
I hope you mean Bake

For Hubby and I, I just fry the chicken breast plain(LC) in a little oil. The kids love the breading. I take any extra bread (dried, old, heals, etc from the frig) put it in a blender/dicer/mixer appliance add a little oregano, salt, pepper (really what ever seasoning you have on hand) and mix up. Use that as the coating. I should have put one egg on the list too for $.11, but forgot. Dredge the chicken breast in egg then the homemade crumbs and fry them in oil. Place on plate, add and little sauce, maybe tbsp or 2 depending on how much I have left for the spaghetti dinner night, add a little Mozz cheese on top. Pretty easy. I might add a little butter to the noodles so they have a little butter sauce. There will probalby not be enough spaghetti sauce in 1 can for two meals. Hope that helps

Actually, I meant 'bread', and made the correction just now. Sorry about the typo, but you've answered me in your most recent thread anyway. I was curious because I'm eating wheat free and was hoping it was using almond or flax. I've tried breading with almond flour and not had great results - not sure if it's the meal or the cook! Thanks for your instruction here.

I have thought about using pork rinds too with Parm cheese and seasoning. I might try them out on hubby and me first and see if we like them. Their only $1 a bag.

That's what I use - comb pork rinds and parm cheese (the kind in a can). Works great after the egg wash, although after it used to work better when I was using carbalose first.

Well another week and finding the kids (teen boys mostly) are eating everything. Upped my food budget by another $100 just to feed them. Debt reduction will take a little longer, but at least we can eat and eat well I am running around $600 a month now for the family. Not too bad. We eat mostly freah fruits and veggies, home cook everything and hubby and I are Low Carbing it, so lot's of meats & cheese. So here is what I decided on for this weeks dinners. Have a great week.

Here you go

Homemade salad dressings:

Homemade Caeser:
2 cloves garlic
3/4 cup mayo
2-3 tsp anchovy paste
2 Tbsp parmesan cheese
1 Tbsp lemon juice
1 tsp worcestershire sauce
1 tsp Dijon or deli mustard
1/4 cup olive oil

Blend in mixer.

Blue cheese Dressing:
1 cup mayo
1 cup sour cream (you could use, cream or cream cheese instead)
1 cup blue cheese
1 tbsp red wine vinegar

Put 1/4 cup crumbled blue cheese off to side. Place mayo, sour cream, vinegar & 3/4 cup blue cheese in blender. Mix. Pour into contain add 1/4 cup blue cheese crumbles. Yum.

Ranch Dressing:
1 tsp garlic powder
1/2 cup buttermilk (or 1/2 cream & 1/2 tsp vinegar)
1 tsp dries parsley flakes
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp pepper

Combine all, chill for at least 30 minutes (still tweaking this one, but very good)

We will be having a lot of chicken coming up. The local Harris Teeter has roaster chickens on sale .77 lbs limit 4 a day. I have bought 8 so far and 8 more to come before the sale runs out. They are running about $3.70 per roaster chicken (great deal)

Hello I wanted to post because I made a very good left over supper last night.

I browned the left over ground beef after making my DH a cheese burger.
Drain grease off, I do not consume left over grease, ugh. too many toxins in it~
Add CO.
Add left over pork steak chopped up
Any and all cheese you have in fridge, I only eat the hook that has red wax on it
chopped half a dill pickle and put it in to heat up~ pickles or anything with a bite to it causes my salivary gland to fill with fluid and causes bad pain. Plus cooked dill pickles are very good :-)
After I had all of it good and hot I stood looking at it wishing I had a binding agent. I tried a little bit, I think it was about 2 tab. of HWC. WOW it was great!

Gave me some ideas to try more things with HWC. I have never cooked with it before. I was amazed it tastes so good :-)

I have not been to this thread before. I will be here now. TONS of foods to try in here. Great thread.

It was so good last night. I tried to eat all of it and couldn't.
I reheated it for lunch today and it was not as good with the egg I throwed in it.

whipper I have seen you post on LCF before I am glad I see you again.
I too am diabetic.
I too am LC.
I am VVLC now.
My weight loss has stopped.
I know this is a thread 4 rec. but I wanted to ask you a Q.
Do you take any meds today for your B/S?
I stopped all the insulin I was on.
The insulin was my free pass to eat. So I got to my all time high of almost 300!
When I stopped the insulin and started doing LC my weight melted off. Now I can NOT get it restarted!
Have you had this problem??
I am sorry I posted that on here but I need to know so bad.....

Hi whipper~~~ I put it in coffee too. I add coconut oil to it. It's very good!
I think the CO is good for us!

Marylouise, I take Metformin only. I am trying to take such good care of myself that I NEVER have to be on insulin. There are some threads on LCF that talk about stalling and what different folks have tried to break the stall. EVERYBODY stalls! believe me. And there is no magic bullet because what might work for one, doesn't work for another. The most important is keeping the diabetes under control. There are so many things that can happen if you don't - but I'm sure you know that.
