Monday, January 10th food topic..EGGS!
Ok..starting a new daily thread for the newbies and oldbies alike! This is a post to give new and fun ideas about eating real foods! Each day...one of us can start the thread with the date..and food for the day. recipes and new ways to eat real food is the idea.
Todays food is.....(drum roll please!) EGGS! Egg "Muffins" Pam cooking spray 4 eggs 2 tablespoons heavy cream Leftovers! (so cooked meats, veggies, cheese, whatever) take muffin tins and spray with Pam. Scramble in a bowl 4 eggs, cream, and whatever lefovers you have handy (meat should already be cooked) slowly poor the mix into the muffin tins. Cook on 350 untill eggs are done (about 5-7 min in my oven) let cool. Each "muffin" can be frozen in individaul small freezer bags to have "breakfast" or snacks for the week. Simply re-heat in the micro for a quick meal or snack ![]() Enjoy!

After being on Atkins, I know why eggs used to be called the "perfect" food. They are delicious, nutritious, fillinig, and extremely versatile. You can eat them alone, scrambled, or dress them up with a bunch of toppings. You can eat them as a part of any meal of the day--breakfast, lunch, dinner, or a special desert.
Next week on my grocery list, I am making Deviled Eggs. I can't wait! Lisa Rae, your recipe looks really good. I'll try it next time I have some leftovers. |

Crepes (for OWL or Maintenance) 4 eggs 1/4 c complete pancake mix 1/3 c water Blend pancake mix with water, blend in eggs. Pour a small amount into a preheated 8 inch skillet coated with non-stick spray. Swirl to coat bottom of pan. Flip when edges start to curl. Makes 16 crepes. Ideas for crepes: * Fill with chicken/cream cheese/green chiles, roll in a casserole pan & top with green chile enchilada sauce & jack cheese - yummy enchiladas * Fill with cheddar cheese & ham, microwave until warm * Fill with berries and whipped cream for dessert * Fill with mixture of ground pork/beef/veal, top with LC Alfredo sauce - canneloni * Saute shrimp in bernaise sauce. With slotted spoon put shrimp in crepes, top with bernaise. 4 crepes makes 1 serving: per serving - 117 cal, 6.25 gms fat, 6.5 carbs, 8 gms protein My kids also love these in place of pancakes with s/f raspberry syrup & butter on them. I'd like to try making these with Carbquick, but I haven't ordered any yet. |

Eggs... gotta love 'em!! We usually have 2 to 3 18-paks in our refrigerator at any given time... anytime we down to 18 we consider it "getting low" and run out for more!
One of my favorites -- and an oft requested breakfast from hubby -- is a FRITATTA... Fran McCullough and Suzanne Somers both have good fritatta recipes in their respective books... mine is usually sauteed onions or garlic tossed in with some thawed & drained frozen spinach, about 6 scrambled eggs, a cup of cream, and an 8 oz. pack of shredded cheese (if we're feeling ambitious we might throw in mushrooms or leftover zuchinni or meats into this.... cook it on the stove-top over low temp for 5-10 minutes (till the egdges set)... and then stick it under the broiler for a few minutes (until the top is golden brown)... turn it out onto a plate... I like to run butter along mine while it's hot... serve hot OR at room-temperature... great plain or with bacon or sausage... try topping it with sour cream or more shredded cheese or even salsa!!! This is a great alternative for people who used to enjoy Quiches for breakfast. I also make EGG CREPES, like someone else mentioned... although I make them like Suzanne Somers using only beaten eggs (these are fragile, so my first attempt made some pretty unattractive crepes, but by the second time I had it down and they're easy and wonderful!)... in fact, I made some this weekend, stuffed them with garlic spinach and topped them with a home-made creamy parmesan dressing (just cream, good grated Parmesan, pepper).... husband thought it was TO DIE FOR!!! Suzanne actually has three different stuffings for these crepes -- all low carb, including Spinach / Ricotta, Ground Beef, and Wild Mushrooms -- all fab!!! Isn't this WOE absolutely decadent?!?!?!

My recipe for deviled eggs is wonderful and I use completely and totally legal products:
Eggs (boiled, of course) Duke's Mayonnaise (no sugar added to this mayo like most have) Mt. Olive Sugar Free Pickle Relish Dash of mustard, pepper, salt Paprika on top |

Egg Salad
I love to make egg salad, just like normal with salt, pepper, mayo, but I love to add cut up bacon....it is so good.
They cleaned it out at my recent holiday breakfast! |

When I don't have time to boil eggs (altitude issues here!) and am needing a quick fix I fry up a few eggs, put them on a plate and refrigerate for a few mins. Chop them up and add mayo. Really quick egg salad. Oh I love eggs. I never get tired of them. Anyway, anytime.

I adore eggs..... and I have been making the egg "muffins" for the past week.... just love them.... just heat them up and you have a great snack or breakfast........

I try to keep hard boiled eggs or some type of egg dish, like egg salad or quiche in the fridge. Great for a quick bite when you're too hungry to make a big meal.
I like quiche. I make one on Sundays and have a slice every day of the week. This week it was sausage w/ onion. 1 lb sausage (I bought JD in the roll)-canuse bacon or ham, whatever you have on hand 1/2 onion (I had red in the fridge) 10 eggs 1 cup cream (I used 1/2 and 1/2) salt, pepper, dash of garlic 1-2 cups shredded cheese (sharp cheddar this week) Just brown the sausage in a skillet, crumble it too. Add onion and cook until the onion is soft and the sausage is browned. Dump in the bottom of a greased deep dish pie plate. Mix remaining ingreadients in a bowl and pour over top. (You can either mix the cheese in w/ the eggs or just put it on top. I've done it both ways - forgot to add it once, and it came out fine both times. Bake 350 for about an hour, on until it's not giggly in the middle. Comes out kinda like a cross between a souffle &a quiche. Yum! And I keep the leftovers for breakfast or snacks each day. Note-real quick and a cheaters quiche-a bag of the Real Bacon by Hormel, a few shakes of the dried minced onion, the rest the same and it's delicious. I do this when I'm too lazy to cook a meat or cut an onion. I've actually gotten the most compliments on this one. Eggs make this WOE so easy! Let's hear some dessert ideas w/ eggs. I know some of you must have a good mock danish or custard recipe to share.

This is such a wonderful thread. It is amazing how many real food options there are. With all the LC junk food that was put on the market, I completely quit trying new recipes and took the easy route instead.
In viewing this one thread alone, I already have 3 dishes that I'm definitely going to make in the next two weeks. And this is just the "Egg" thread! ![]() |

Classic eggs benedict. I substitute the english muffin for a dobie muffin, or low-carb one. SOOOO good!! (when you use your blender for the hollandaise sauce, it's quick and easy!!)

Mt. Olives make the sf relish I use. It is so good and sweetened with Splenda! They have excellent bread and butter pickles, too!
Mom2fourboyz- I've wondered about cooking the eggs and then chilling and making it into egg salad! I would love to do that vs. boiling, peeling and chopping eggs! I'm going to try that! |

Wow..so glad to see so many came in and are posting! I look forward to keeping this going. Didn't get to talk to cheri a whole lot about this idea..so will find out if anyone can post it..or if we should just keep going with this thread! Keep up the great work peeps!

WOW! Great Thread! I think I will have to try some of these recipes!
I really love making omlettes for breakfast: 4 eggs, scrambled with 1tbs of cold water, salt/pepper, herbs to taste, heat pan with a pat of butter, pour scrambled raw eggs into pan, once, the egg mixture is nearly cooked through add some chopped pepper, mushrooms, green onions and your fav cheese to 1 side of the egg mixture then flip! Cook a further 2-4minutes with lid on, cut in half, serves 2! Enjoy! Of course you could add anything in the omlette, bacon, tomatoes, asparagus, fresh herbs, pepperoni, green beans, sprouts, spinach....Be inventive! ![]()

These recipes are making eggs look good--I hate eggs, in general. I'm trying to learn to like them, though. I will be trying many of these recipes to help me reach that goal.
What I make from time to time for my family is made in a muffin tin, too. You cook your bacon, 1 piece per cup, until it's almost done but not quite. Line each cup with the bacon. Break an egg into each one, then put a little melted butter on top. Bake them at 350 until the eggs are set, about 8 minutes, give or take. I don't know how well they keep because I only make what they'll eat, but it would be easy to keep the bacon in the fridge and just throw it together quickly. Edited to add that I add some pepper and a touch of garlic powder to the egg, but with the salty bacon, I forego the salt.
