Great ideas & great thread.
I cook just for me but hate to cook all the time. So when I cook i cook a lot and freeze in single servings.
chicken legs
ground beef
muffins
pancakes
soup
I buy salad mix and divided it up when i get home.
I buy precooked bacon at Costco. Its great any time a need a little.
I keep lots of frozen veggies in freezer.
I measure and package nuts in single servings
boiled eggs a dozen at a time
cut cheese blocks into 1 oz pieces
Cans of tuna and samond
Salad dressings and sauces
Pre measuring really helps at meal time

O.K. I see some great ideas. One question:

I notice some freeze their scrambled eggs. Do these really freeze that well. What are they like when you defrost????? I have never frozen scrambled eggs, never thought of it, but, breakfast is the worst for me, I hate to cook in the a.m.

Also, when you cook the pound of bacon, do you just keep it in the fridge or freeze it????

* Avocado soup - outrageously good recipe at http://www.avocado.org/recipes/view.php?recipe_id=190 - I use yellow squash instead of eggplant, and only a few drops of sesame oil (thiers must not be nearly as strong as mine!) This recipe will last you and yours all week.

* Red peppers in olive oil: Saute thin strips of red pepper in 1/4 cup or so olive oil. They should be swimming by the time they're done. You can use the peppers, the flavored oil, or both in recipes all week. Throw some in your scrambled eggs, atop your fish, or mix with cream cheese. Or sneak some for a LC snack.

* Count nut servings and put in snack-size Ziplock baggies. Maybe you all have better restraint, but if I don't count, those Costco containers disappear way too fast.

* As you've all noted already, a Beachgirl's cheesecake in the fridge makes low-carbing pretty easy. I feel so decadent having cheesecake and Starbucks for breakfast!

I'm a newbie, and have gotten some great ideas.

One thing I do is make a big batch of spiced walnuts or pecans for snacks. I took them up to my parents for Thanksgiving, and everyone ate them (I hadn't actually meant them to be for everybody else, but was happy to share - well, sort of)

Ready Made Meals

Weekends are for making up things to eat ..... after getting groceries ( usually friday nights) start boiling my dozen eggs to keep in fridge. Saturday - decide what meal plans are for the week...... slice up roasts into steaks or cube for crockpot recipes. If fish on the plan, just slice up servings wrap and put in freezer..... slice and wiegh all veggies out for salads and store in baggies ( mushrooms, salad greens, cabbage, onions, celery, peppers, radishes)... cook up my bacon ( a pound and crumble up) put in sandwich baggie and put in fridge for toppings in salad or add to eggs in omelettes, or quiche. Seperate my "special " veggies like asparagus, califlower, brocoli, blanch them and put them in single servings baggies in freezer. Sunday is sports day, so usually make up some chicken wings, and some meatballs, to snack on for the games and the extras i put in single serving baggies for latter use. Make up my salad dressings and dips for wings for the week, italian/ranch/bluecheese and put them little plastic containers to carry in lunch box( i have different colored containers for the diffrent dressings). Take assorted cheeses and shred up, put in baggies for addings to salad or omelletes/quiche ( the store bought blends of cheese just don't do it for me rather pick my own cheeses). Maybe make a cheese cake or sf jello concoction in small cupcake pans, so i can feeze and use for single servings. Put a list of meals on fridge so i know what to pull out the night before from freezer. And i am good for the week.

Thanks Dreamchaser ! I have always loved to cook, but as my wife rules the kitchen ( she thinks its her room ! ), and everyone else in house is carberz. I only get to make one "Big Mess" per week. LOL.
Unless my daughter comes to visit us, she likes my cooking better than her moms
Basically i cook my food, my wife cooks everyone elses.

What a great thread!!

I do alot of what has already been mentioned..
cooking extra meat
deviled eggs
making muffins and freezing them
etc.

DH and I tried something tonight and I wanted to share. We took a jicama and sliced it very thin. We deep fried them and they were great! Tasted just like a potato chip...just a little different texture. We also grated some up like shoe string "potatoes"..They turned out good too! I'm gonna try making up a batch and putting them in a zip-lock for snacking. These could be addictive!

4 days into induction and I am trying to find all the tips I can. My 15 year old son and I are doing this together. I am a little envious of all you who plan and cook for an entire week. At first, I thought, this is a great idea. Then reality set in. Cooking ahead would only double (or even more) my grocery bill each week. My husband and oldest son are not on this plan and even after 4 days I have run into a problem. They eat all of our food. They keep saying they don't want to do this and my husband really should, however, all the high carb foods are still in the kitchen and they are eating our low carb foods. So, even if I did cook for an entire week they would have everything consumed in 48 hours.

Going to print this string. Maybe some day I will be able to use all the great tips.

Wow, what a cool idea. Very interesting. I've never tried jicama. Thanks for sharing that.

I thought this was definitely worthy of bumping up again. This post was so helpful to me. Over the Christmas/New Years I haven't been as diligent with my eating (no cheats, but just eating more than usual).
