Slice peppers in half clean out seeds and fill said pepper with cream cheese ( and I use colby jack to!) wrap in bacon and pop into the oven.

I cut them in half, scoop seeds and fill with a mix of Mexican cheese. Then I wrap each half pepper in a whole slice of bacon. I cooked at 350 degrees for about 30 minutes, until the bacon looked done.

I used a recipe PM'd to me by Bekini Babe.

Slice the peppers in half, clean out the seeds.

Mix cream cheese, shredded cheese (I leave this out) and bacon (bacon pieces from the store in a can work fine.)

I add some garlic salt and some jalepeno seeds to the cheese mix, I like it spicy!

Place the mixture in the shells, cook on 325 until top of cheese turns golden brown.

YUM!

I am too impatient and kitchen-challenged to wrap anything in bacon.

I would do it this way because I usually do bake bacon in the oven. It takes a long time to get as crispy as I like it. I can't stand flacid bacon.

(Ok. I couldn't think of another word.)

Diva -- I love my lazy self! (Think Heathers: "I love my dead gay son!")

Flaccid bacon -- I, too, loathe a limp bacon. I need it crispy. I nuke my bacon for desired crispiness. But how this helps the poppers discussion, I do not know.

I'm just lip flappin' away here....

I cook the bacon partially anytime I need to cook something wrapped in it, like Hidden Valley Ranch Chicken or poppers. I usually bake the bacon in the oven, make 2 lbs at a time, one crispy, the other half-baked.

I mix cream cheese, shredded cheese, onion and garlic powder together for the filling, then I cut crescent shaped lines from one end of the pepper to the other, open the flap and scoop it out. Fill with cheese mixture 'til just overful, dip in egg, then parmesan, (double dip if necessary), and then chill for a while.

When chilled I deep fry small batches in 375 degree F oil.

We don't need no steenkin' bacon... that goes on the scallops that we serve alongside them.

The peppers are only 98 cents a pound now, so I thought I'd try them.

I invented my own recipe for the filling: cream cheese, cheddar cheese, minced garlic, and a dash of salsa. I put fresh cilantro on top of the finished product. Some of them were made with Anaheim peppers which are much longer. The jalapenos were hotter but not that hot. I got lazy and started to lay the bacon on top! These are great with sour cream!
