Allergic to eggs, wheat (grains), and dairy...what to eat?

Hello!

I've been Paleo-ish for a couple years now. I developed some food allergies after a period of intense, chronic stress. I cannot have anything with eggs (aniphylaxis), wheat/grains (bloating and pain), and dairy (bloating and pain). I am also experimenting with not drinking coffee (so sad!) because it seems to upset my stomach, too. I take supplements (including probiotics), and I am trying rather desperately to heal myself. I will be getting a hysterectomy within the next 6 months which will help with my anemia issues. So. My question: what type of breakfast recipes are out there for someone like me that I can take on-the-go? I have to leave my house for work by 6:30am. So far, I've been taking pumpkin 'muffins' made with chia seeds (as a binder), pumpkin, honey, coconut oil, etc...but what else is there that I can make ahead? Meat and veggies for breakfast just doesn't sound appetizing. Any ideas for me?

What about a protein smoothie with coconut milk (or coconut cream for the good fats), a vegan protein powder, and whatever else you like (berries, pumpkin, cocoa for chocolate, etc)?

Or oatmeal with coconut oil, nuts and whatever fruit you like.

I spent a few months with similar restrictions and that was some of the stuff I ate.

The vegan protein powder in a smoothie with coconut milk sounds promising!!! I will have to look and see if I can find one that is GF! Cool! Thank you! I can't eat oatmeal without bloating (I love it, too), and I think it's too carby for me, unfortunately.

Any other ideas out there????

Can you eat flax meal? I make a bread that is just flax meal and water made into dough and baked in the oven....spread thin...I use it for little sandwiches with any kind of meat or a BLT. Or nut butters.

Ooh. Made coconut waffles this morning. I used Eggbeaters instead of eggs and they came out great. I got the waffle plates for my Griddler and am thinking of ways to use it. Pumpkin waffles, banana waffles, protein powder waffles...oopsie waffles. They are square so I can use the waffles for a hamburger or a sandwich.

Do Eggbeaters have eggs in them? If not, what is it made of?

Yes, Eggbeaters are made with real eggs, so should not be consumed by someone allergic to eggs.

Thanks. I think I am going to have to cut out eggs too. I can figure out alternatives to straight egg dishes, but it is the recipes that are perplexing me. I like to make mayo. The eggless recipes look like gak.

I like the Warrior Blend protein. I have similar allergies (not the egg ones though) and I find I tolerate it well. I usually make my smoothies with almond milk

Just a lot of real, whole food. I have the same dietary restrictions as you except for the eggs, and I never find I need a protein shake in order to get my dietary requirements.

veggies
meat/fish/poultry/pork
possibly butter - butter contains a mere fraction of lactose and is tolerated by some dairy-restricted people; it may or may not work for you
nuts
cocoa powder (yum)
oils
beans
fruit
herbs, spices

In no way a deficient diet.

I agree with Mel. I am sorry about your egg allergy. I eat eggs quite regularly, but have recently found that I have a close family member who has developed egg allergy. So frustrating.

I usually have some type of protein for lunch with lots of veggies. My favs are salad greens, cukes, peppers, artichoke, asparagus, and olives. Dinner is lighter and includes a potato or rice with protein. I don't know why, but I have never been able to drink protein shakes? I know it is a fast way to get protein, but I have difficulty drinking them and usually just forgo.

Your breakfast tastes might change with a little time if you give it a try. I used to be a cereal eater, and when I switched to LC I thought this WOE caused intense intestinal problems that made me switch. Luckily I finally realized it was an unknown egg intolerance, and LC actually makes my gut work best now.

But anyway, I was stuck because I needed breakfast food. I ate kosher hot dogs almost every single morning, and it only took weeks until this seemed normal to me in every way. Plus, it was easy to cook, quick to eat, and I really like the taste.

At one point, this sounded terrible - but if you have not given a meat breakfast a try I hope you do. Good luck with what you decide!

I bought an allergy cookbook and it has a bunch of quinoa recipes for breakfast. They aren't low carb though. A quarter cup uncooked has about 25 carbs and they add nuts and fruit.

When we have the weekend family breakfast I usually crumble up some bacon in a bowl with chopped tomatoes and avocado.

This is the first time I'm posting here, this thread is calling to me. I'm usually on the low carb forum. Some health history: Multiple Chemical Sensitivity, asthma, COPD, TP disabled several years ago. Ate the Standard American Diet, lived (generally) the Standard lower/middle class American Life till then. Because of the MCS, I eliminated ALL fragrance products, became a hermit to avoid Fragrances of others because I was so reactive to them, but continued with the SAD. Reactions to fragrances spanned the whole body. Depending on the fragrances, even those over the previous days, any body system could be affected--mental problems, learning, digestive, eliminative, respiratory, skeletal, real severe hunger, social, (rage reactions) you name it, it might be affected by fragrance chemicals and or fumes.
I used O2 daily, could barely walk, was very short of breath, took several respiratory drugs a day. I live at 2600' and my doc wants me to move a lot lower.

I used to eat a lot of eggs--2 to 4 a day. Dec 5 2013 I ran out of eggs, and was so sick I couldn't leave to get groceries. I read that eggs could cause respiratory problems, and apparently that's true in some people. For some reason I decided to quit breads/grains/starches/glutens, fruit and juices, and most dairy. I had also eliminated all the carpet in my house.
Since then these changes have reduced the inflammation in my body and it's easier to breathe. I use O2 less frequently, have eliminated one drug totally, have lost weight and recently went to a higher elevation for a few hours with no ill effects. I still react to fragrances, but that I was able to go that much higher without using O2 is just absolutely incredible to me. I do hope this can help someone.

All this to say it may not be JUST various foods that you're reacting to. Perhaps some of those reactions may be related to fragrance products. Something to think about.

Hi Ella,
I'm so glad you are finding out how to heal your body. I stopped wearing perfume quite a few years ago out of consideration for friends that had a sensitivity to it. Have you seen the ALLERGY STICKY? There are a lot of good recipes on there. I no longer eat dairy, wheat, and tree nuts because of joint pain.

Sorry to hear about your allergies.

Here are some suggestions:

* Are you able to have coconut? If so, I learned over the summer that it is not too difficult to make coconut milk yogurt.

* There are a lot of bread recipes using tapioca flour (which is a root not a grain) combined with other things, such as almond flour, such as this one: myheartbeets 3 Ingredient Paleo Naan (Indian bread) (Note: I find this easier to bake than fry - I didn't have any success with frying)

* Also, there are bread recipes using chickpea flour or sprouted lentils. While these technically aren't paleo, they may be options.

* I think in many cases, for baking, flax seeds can be used as an egg substitute.

* A couple years ago I did a lot of baking with pea protein/hemp protein (as a flour substitute) and that may also be an option.

* There are also recipes for paleo granola which does not contain grains or eggs. I liked this one, and I found it wasn't really necessary to add the honey because dried fruit adds enough sweentess itself (however, it is tasty with it!). paleocupboard granola.

* Vegetables might be more palatable in the morning if they are part of something else...you might try to make a sort of spinach muffin or other bake, perhaps using coconut/almond milk or coconut/nut-based "cheese". Or, maybe a roasted eggplant or red pepper dip to have with other vegetables or some of the above.

Finally...it's not my business, but you might want to be absolutely sure about the hysterectomy before you do it - it seems that this procedure is performed far more often than it needs to be.

I knew I forgot something on my list-- I quit breads/grains/starches/glutens, fruit and juices, and most dairy. AND most sugar, including artificial, and eggs (other than what was in recipes or processed foods. I was so sick that preparing meals was difficult to impossible. I use a bit of honey in coco and now I'll eat an egg with meat or veggies on occasion. Same with cheese. Only once in a while. All personal care and household cleaners are natural and free of fragrances.
Grammy, Thanks. and I know your friends really appreciate your being fragrance free. Mine still do not understand...
There's been numerous changes for me, and you mentioning joint pain reminds me that a few weeks ago my index finger joint started hurting, and hurt for a few days. It has been somewhat swollen and bent for a few years. Then it quit. BUT, it's no longer as bent as it was! It's still swollen, but straighter.
Avicenna, thanks too for your post. I'll look into some of your suggestions. I alreaady did, the coconut milk yogurt, and I have a big bag of flax meal.

I can't remember if you mentioned this...but you might try eliminating nightshade vegetables for a while too to see if that helps. (Eggplant, tomatoes, peppers - you can google it) Some people get pain/inflammation from them.

Also...depending on what sort of thing in the dairy you are allergic to, you could try different types of dairy. I am allergic to cow dairy but not other forms of dairy (i.e. I can have sheep cheese, goat cheese, buffalo cheese). Also I have read that cheeses that are very aged, or are baked at a high heat, are less allergenic.

Lots of good ideas here!

When I first started LCing one of my favorite breakfasts was half an Avacado topped with crumbled bacon. It was hard for me to move away from my beloved breakfast breads, but that recipe certainly helped. Not sure if bacon is even allowed on this WOE, though. I'm just starting to learn my way...

I recently saw a recipe for a porridge made of 3 c almond meal and 4 apples cooked down in a slow cooker. I haven't tried it, but plan to!

Good luck finding something that works for you.
