Coconut Milk

I'm a little confused on using coconut milk in recipes. Can someone please tell me the difference between:
1. A real coconut, with liquid inside
2. A carton of coconut milk found in the dairy section
3. A can of coconut milk, unsweetened
4. A "lite" can of coconut milk
5. A can of coconut milk
I'm so confused.
Can anyone help me understand?

I went off to the kitchen to look for you.

With Paleo obviously only some people would have had access to coconuts, that is the natural form with no added sugar or stabilisers like the other products you mention.

The coconut 'milk' inside the shell is very watery and thin, the manufactured milk is much thicker and has suspended coconut mash and some have added sugar and guar gum too.
Depending on what you are using it for you might like to try creamed coconut (just to add in another) which is pure mashed creamed coconut with no added stuff that you can thin to what you want.

Overall coconut is high in good fats but please look at each coconut option thoroughly as not all brands are the same.

Wow, lots of options. Thank you for the info. Think I'll skip it for now, since I don't understand it fully. Sticking with meat, eggs and veggies for now - I have a lot to lose. I'll skip the collection of recipes that look amazing and just stick with the easy stuff....
