Coconut cream HELP! PLZ!
Ok Paleo peeps! I need help please! I can't claim the recipe, i found it on Pinterest and can't remember where! BUT i take 2 cans of coconut cream (it is pure coconut, nothin' else...just REALLY heavy on the cream, very little water left over), one egg and about 5-6 tb of CO (liquified).

I have been doing this for quite a while, but the last two times, the mixture has coagulated on me as soon as I add the oil. I warm it in the microwave, but it isn't even close to being WARM let alone hot. I have tried adding some of the water from the can to see if i can bring it back the creamy state...no luck. It almost seems like it is turning to butter...will that happen with coconut cream???

Has anyone else had this issue??:confused:

hmmm...I have no idea. I use the cream as is with nuts and a bit of Stevia as a mousse - not familiar with your recipe.

Sounds frustrating!

I think your issue is actually the coconut oil - if it gets the least bit cold, it goes chunky. So, if the egg is cold, your coconut oil may go hard where it comes into contact with the egg. Try using a room temperature egg and see if you have the same problem. In addition, if you can add the coconut oil to the blender as it's running, that may keep it from seizing up.
