Former Vegetarian with Celiac

I am a former vegetarian (actually vegan) and I was diagnosed with Celiac Disease. That means I can't have any wheat, barley or rye products or I get very sick. My doctor told me that I needed to eat meat because my levels of B-12 and other vitamins was very low. He said talking vitamin B-12 supplements wouldn't work for me because my body had a hard time absorbing them and I should get it from meat. I wasn't a vegetarian for animals rights or anything, but for health, but apparently it was destroying my health. So here I am eating meat again.

Hi, Sue. I, too, was a vegetarian (for most of 35 years), with some times of no dairy or eggs. It took me a good while to adjust to eating meat. I started with fish and poultry. It took some mustering to have the gumption to take up beef again. I am so glad I did. I am much, much healthier now. (Being a vegetarian ruined my health, too.)


Bone marrow, marrow fat, bone and meat broths, liver and brains, egg yolks, and pastured butter, and occasionally some high-Omega-3 fish, have helped me so very much. A few vegetables, and some herbs, fermented cream, add some most enjoyable variety. I still eat some cheese, but try to limit it, as I seem to fare better on homemade yoghurt, or cream cultured with buttermilk, than with cheese. I drink cream, sometimes, too. I took up Dr. Jan Kwasniewski's recommendations of how much muscle meat and offal, but haven't quite gotten up to the amount of eggs and egg yolks per day which he recommends.

I use Dr. Richard Bernstein's recommendations for carbs, both in what kind and how much, as well as when. His Law of Small Numbers improved my health dramatically.

There are several in my family with celiac/gluten intolerance. We make things out of rice flour, tapioca flour, sometimes quinoa flour, and arrowroot, for treats for them.

Can you eat eggs and any dairy? I eat mostly yolks, but sometimes whites. Chris Masterjohn's posts at his blogs on eggs have been of great help to me.

Cod liver oil, L-Carnitine, magnesium, and other supplements, have helped me tremendously.

Auntie Em, I follow your posts and find you to be one of the most informative (and calming) presences on these boards.

I do have a hard time finding info about Dr K's diet online ... perhaps I need to actually purchase his book. Can you tell me how many eggs he recommends (which you're having a hard time meeting)?

I'm not at my own computer and don't know how to do many things on this one. There are some references for information on Kwasniewski's plan in the Kwasniewski Support thread, in the Other Plans sub-forum, here at LCF, if you wish to look. I often use the "advanced search" function to find things here.

Also, Peter Dobromylskyj's blog, Hyperlipid, has several posts about Kwasniewski. There is as much good information in the comments after the posts, as in the posts themselves.

Or you could post a question in the Kwasniewski support thread, and others will help.

I'm sorry I can't help more today. The computers at the library are foreign contraptions to me.

I was vegan for the longest and it ruined my digestive system. I have horrible reactions to wheat and dairy now. Converting to Paleo eating was tough for me since I am not a meet lover, but I am experimenting with recipes and its getting easier.

I can say that I feel much better. I was either going to keeping eating like that and be on a ton of meds for life, or I needed to find another way. I did a bunch of research and it all came back to a Paleo/Primal style of eating. I would prefer to figure this way of life out than continue to pop pills and still not feel all that great.

My DH and I have been vegan for about 18 months. Yes, you lose weight. But, something just wasn't right. My thought process suffered. So, we are going Paleo. Lean meats, some eggs, lots of vegs, fruits and nuts. Read the book. No dairy, grains (my weakness), sugars, processed foods.

Just to add to this, I was vegetarian for a few years and never felt right...always, always hungry. Always. I have suffered from vitamin absorption issues and chronic illness for over a decade and for the first time, I am not sick during the fall and, so far, the winter. I attribute this to Primal eating (or eating by a Paleo template), vitamin supplements, and exercise (weight lifting in particular) along with stress reduction and focus on enough sleep. I believe that getting your health back CAN be done...it may not be what it was when you were young, but it can be an improvement in the overall quality of your life. I'm also a past vegetarian, who was also striving to be vegan for ethical reasons. I tried this for three years. I was also ALWAYS hungry and fatigued. I kept trying to eat more magical fruits and vegetables, but they didn't help. I started having really painful gas reactions to beans ..... over time my periods started getting really painful too - I can't help but think my (still modest) soy consumption had something to do with this.

Oh, and I was still steadily gaining weight.

I would never say this diet is terrible for health - there seem to be many long-term stories of health this way of eating. But, I will say that if you are in any way insulin resistant, then the vegetarian/vegan diet may not fulfill its promises.

When I was around 12 years old, my family moved from the country to the city. My parent's had grown their own vegetables and always bought a cow to feed the family for the year. That was it. Then, in the city, I couldn't move around oustide very much, and my Mom fell in love with Aldi's.

I gained tons of weight at a very young age, in an extremely short period of time. By the time I was 13, I remember going to WW and weighing in at 230 (I was much shorter, too). I had never had a weight problem before.

Anyway, I'm pretty sure this super-fast, unhealthy weight gain during my crucial years of development has made me extremely carb-sensitive.

But, my husband, for example, is lean and can eat as many carbs as he wants. He always stays within the same 10lbs. Carbs don't bother him at all, so he would probably also still be 'healthy' on a vegetarian diet ---- if that makes sense.

I totally struggle with the whole vegetarian lifestyle. I always feel it's the right thing to do. But as I was reading here, it's just not for everyone.

Thanks to everyone who posted. Made so much more sense reading it all in black and white. I know how you felt juliekaboolie, I'm always hungry. Also thanks Auntie Em for the links.

I just have to do whats right for me. Thanks again.

Hi Sue,
I have hypothyroidism. I was diagnosed with it in my 20's, before I became vegetarian. Because I have hypothyroidism, I now have low B-12 stores, even though I eat meat. I was vegetarian for 15 years and vegan for 3 of those years. My doctor put me on supplements, and she told me that if my tests indicated that B-12 in pill form was not being absorbed, she would switch me to shots... Did your doctor suggest B-12 shots? At no time, did she mention I should eat meat, or more meat, or get my B-12 from meat.
Here's the funny thing... when I was vegan, I had no problem with my B-12 stores. It's only since I started eating meat again, that I've had to start taking a supplement. Go figure. But apparently, this is not uncommon in hypothyroidism.

So... I'm going to suggest that you see a nutritionist/dietician. Doctors are not trained in nutrition, or supplementation. You're better off to get nutritional advice from a specialist, especially if you have Celiac disease. That old "eat meat for B-12" advice sounds suspect to me... kinda lazy advice... like slapping a bandaid on a cut that requires stitches.http://www.lowcarbfriends.com/bbs/im...fused_2011.gif
