My menu looks a lot like Kellydawne's. I don't count anymore, carbs or cals, but I believe around 50-70g carbs and 1600 cals is about what I consume.

B- eggs or meat leftovers, a couple of baby carrots, 1/4 c blueberries or other fruit, sometimes muffin out of flax and nut flour

L- 3-4 oz of meat, chicken, or fish and a salad with lots of varieties of veggies and herbs,
Another 1/4 c of fruit, sometimes sweet potato instead, olive oil on the salad

D- same as above, but cooked veggies, about 1/2 c each and if I want more meat or veggies I eat them

Snacks- nuts, almond milk, and lots of coconut milk in tea and coffee, still do coffee and a piece or two of chocolate Or low carb treats I make using the above, and a bit of fruit for sweetening. I freeze some too.

I'm not perfect, but the above keeps me healthy and at goal. I do also try to do organic and pastured, etc. I cook with coconut oil and bacon fat (Applewood,with no hormones,antibiotics,nitrates) I like fatty meats and fish, eat the skin on chicken.

Thanks for the meal ideas!
I'm struggling since we just returned from a vacation and I don't have any leftovers!
I did have a bowl of fresh spinach with a few berries and sliced almonds (oil and vinegar for dressing) for lunch and we're having burgers for dinner - no buns for me!

I made Breakfast Egg Muffins this afternoon to have for the next few days too.

I love reading everyone's ideas!

THANK YOU so much!!!! That is such an awesome help!

I purchased a couple of different Paleo cookbooks and I'm really anxious to try some of the recipes in them . I'm pretty much off of dairy and sugars - I find that dairy is just not liking me these days. I can gain 10lbs just looking at it ... well okay that exaggerated, but you get my drift ... lol. I make all my smoothies with either Almond Milk or Coconut Milk. At one point I was adding cream cheese (full fat kind) and Greek Yoghurt (full fat); however, when I saw that Paleo eaters should stay away from dairy - I just started leaving it out.

I also read in a book to be really careful with nuts and fruit if a person was wanting to lose weight - so I'm glad to see that re-iterated here .

It was not my intention to follow a Paleo nutrition plan but my research tells me that my customized WOE is definitely Paleo-ish.

I eat grassfed beef, wild-caught salmon/fish, etc. That kind of thing. No wheat/mostly no grains (a little flax seed meal on occasion), no dairy, no potatoes or starchy veggies. I do eat organic peanut butter and have no plans to give it up to fit the Paleo label.

Paleo rocks!

Doing the best I can with what I've got around me.
Grass fed New Zealand raised beef
Wild salmon
and free range chicken
I bake bacon in the oven (350 degrees for 25mins or so Woot!)
Will zip over to Wally world to look for the no sugar kind
LOADS of veggies

Watching the carbs in fruit... no more bananas or mangoes for a while
but berries are ok in moderation (thinking about all those bears fattening
up gorging down the berries!...that was me this time last year)

Yup I'm Paleo - Definitely not a diet ...like the lady said earlier

Had flashback of the old days one morning. I got talked into buying a mango by my DGD ( aged 5 ). Hey, on sale for $1 and ripe too. Who could resist? Next morning I mix half of it in a smoothie and one hour later I get the sweats and shakes. Run to fridge and gulp a bit of Greek yogurt and in a few minutes I'm better. Just like the old days except this time I didn't plunge for the snickers bar

I'm off paleo for the next 4wks ... I'm back on hCG for another round; however, I'm looking forward to getting back on it ... I've got a craving for salmon burgers w/ jalape˝o peppers and capers and I'm looking forward to making the chicken orange and olive salad again ... Those to things are so so good!

By the time you get back on paleo I should be past the hard part and settling in nicely with it. I've never been grain and legume free. This is going to be a great journey. I'm curious to see how much better I feel with out those things in my life. (I'm allergic to dairy...i still eat it occasionally and pay for it severely....and alot of grains make me feel ill).

Once you are off grains you won't notice it ... I've been off grains since February and I feel SO much better! I've gotten off of dairy; however, I do still have cream cheese every now and then. As for milk I haven't been on that either since I can't remember when. I've switched over to coconut or almond milk for my smoothies ... I notice now when I have something with grain in it my stomache bloats like crazy ... Hmmm wonder if that's what they call wheat Belly?

lmao. Maybe. I know I feel bloated or "swollen" all the time. Its ridiculous. If I eat like oatmeal or grits or too much rice or cream of wheat...(all foods I love sad to say) then I feel like I want to nap all day.

Yes! I have also noticed that starches like corn, rice and potatoes don't impact me as negatively as wheat based products.

I'm the same with the corn, rice, potatoes, not too much of a problem. They aren't great if you are trying to lose weight, but if you are happy with your body composition they are probably okay every now and then. Wheat on the other hand (and too much sugar of any kind including honey) leave me feeling really lousy and they just aren't worth it.

Every week on saturday or sunday I cook for my paleo week:

I sautee two huge pans of Dark Greens (mostly chard and mustard greens and a little spinach). I make a huge container of cauli-rice, I roast two pans of squash, sweet potatoes, onions, peppers and zucchini, and I grill salmon and chicken. Lunch and dinner = super easy--throw a little of everything into a pan and make a new and different sauce each time. A little fruit (and after dinner a little chocolate!) and I am good to go!

Super filling. I eat at 10-2pm-6pm and fast between 7pm and 10am except for coffee.

I need to start menu planning again. We've spent the entire summer just grabbing whatever sounded good to toss on the grill.
New favorite though is bacon broccoli salad.

One stalk of broccoli chopped
red onion (the amount varies depending on how strong the onion is)
1/2 lb of bacon cooked and crumbled

mix together 3/4 cup of home made mayo,
1 clove garlic (pressed or minced)
1 TBS of balsamic vinegar

toss everything together and enjoy. I've been adding a chopped tomato to my bowl just before I fill it with broccoli salad and it makes it like a BLT (with broccoli) in a bowl.

Sauces:

I am not hardcore on dairy, so I construct some sauces using laughing cow and chicken broth

--I use pesto, I make curries with coconut milk, tomato sauces, asian sauces (tamari, shiracha, ginger)--

Everyday Paleo has a nice list of sauces

Thanks for mentioning the sauces area of her site, Ouiz. I had her bookmarked recently but hadn't begun to explore her site yet. Just GOT to have my sauces, so I'll start my exploring there a bit more now. For now, I'm trying to ditch all dairy, but may reintroduce hard cheeses only after my Whole30 challenge is over. Kinda hard to have Mexican food with no cheese at all.

I use tofu cheese by veggie shreds and either it's really good or I'm just used to it.
