You don't need to eat eggs every morning. Or just get more creative with it. I don't like eating food for breakfast. I also made a batch of "omelet muffins" I can take to work. Make a coconut flour biscuit and make an egg sandwich.

How much bacon and nuts/dry fruit were you eating that you think you need to cut down on it?
The bacon well 3 slices every other day very salty... and the nuts/fruit I just started yesterday.... OK I am not gonna freak until next weigh in which is next saturday... I am going to stick with my plan and I am adding my own challenge to work my abs and my arms... I think I can do it

Try getting the reduced sodium bacon. I personally don't think 3 slices of bacon is very much. Good job on the other exercises! I am also trying to work on push ups. I can do zero standard push ups, so I'm trying to get to where I can. I can only do 5 "girly" push ups on my knees before muscle failure. I did 5 more today. Baby steps!

The Lenten Primal Challenge Begins..NOW

SNAP Challenge update....going OK. I went two days without my trail mix so I guess it will be lasting for 10 days

Behind on squats. Worked in yard...a lot of pushing and pulling, huffing and puffing. No yard work today though so I'm a squattin' in the kitchen. Rainy week I'm told, so there will be lots squattin' going on.

Most stores now have their own label "lower sodium" bacon. I can't tell the difference. We eat a lb a week around here. Mostly in salads *anything better with avocados and tomatoes than bacon?" and maybe a piece or two for breakfast. I need to look into making my own sausage patties for breakfast. What about a beef and pork combo?

Had to let you all in on a recipe I did tonite. Made a casserole (Meatless Monday ya know) with spinach, eggs, cottage cheese, quinoa and mozzarella cheese. Maybe I really like it because there was mozzarella on it, but I only used about 1/2 cup on top to just brown, so, no, it wasn't just the tiny bit of gooey cheese, which we haven't had since last summer, that made me like this. The cottage cheese came from a recipe I did for book club last week. Knew I would not eat it so dumped in casserole At any rate, the casserole came out nice and would serve pobably six.

1 pkg. frozen spinach cooked and well drained (squeezed as dry as possible)
6 eggs
1/2 cup canned coconut milk
1 cup cooked quinoa
1/2 cup cottage cheese
1/2 cup chopped onion
1/2 cup chopped red or green pepper
1 T. Olive oil or buyer
1/2 to 1. Cup mozzarella cheese

Beat eggs with coconut milk and cottage cheese. Season with salt and pepper. Set aside. Melt butter/oil in small pan and cook onions and pepper until limp. Cool. Combine egg mix, onion mix, quinoa and well drained spinach. Pour into well greased baking dish and top with mozzarella. Bake 350 degrees for 35-45 minutes or until cheese browns. Makes at least 6 dinner sized squares. A little higher in carbs, but looking at my numbers today, it really did not matter. In the scheme of things, a hearty vegetarian casserole for MM* that satisfies.

*A note about MM - I love meat more than any other food. During Lent, as a food steward, I abstain from meat 2 or 3 times a week for religious purposes only. The rest of the year my DH have at least one meatless day a week in keeping with his childhood memories in the pre Vatican II days We eat seafood at least twice a week all year round anyway.

Even better left over. I used the quinoa as a bit of a filler. More carby than I like but spread over 6 servings not so bad. MDA says it's ok as long as it agrees with your system and it's also very low on the glycemic index. We tolerate it and we only have it about every six weeks or so. I make a mean Mexican salad with it--limes, avocados, tomatoes, cumin, green onions, crumbled goat cheese. It's a summer specialty.

BTW-1 cup cooked quinoa=34 net carbs. Each serving has between (net) 5-6 carbs.

You are making my mouth water!!!!

Happy day I lost.. 1.5 Since Sunday! YEAH and I am 1/2 to the squat challenge finish =)

I need to make something else for breakfast... I don't do the dinner thing since I take leftovers for lunch... so I am thinking about searching out some nice Paleo type muffins with coconut flour or something... anybody have any better ideas???

Also what is the "Ruling" on plain seltzer? It's just water with CO2. Since I quit drinking diet soda this is my drink of choice since I need those bubbles -lol

Oh does anyone know if Chickpeas are legumes? Approved or not? Got a great recipe to use them as kind of like a pizza crust

Hey everybody I'm so far behind on squats.... Worked in the yard but that did not count I guess--squat, scoot, elbow back. Squat, scoot, elbow back. Repeat like 900 times and I got the fertilizer done before it rained (glorious rain). Will do more tomorrow.

Seem to be in a stall. Not eating enough nuts/trail mix highly doubt. Have only had nuts/mix 3 out of last 5 days. In the last month I have stalled out. Maybe hit the wall. Dropped 20lbs very quickly in beginning--in less than 3 months. Need to cut down on 'tinis, even though they are sugar free- love ya Baja Bob. Every third night with a little alcohol should be sufficient or 2 glasses white wine which I havent had since August. Can't complain. Used to hit wall and gain back quickly, like in a week. Hasn't happened this time. Still off grains, wheat, sugar and mostly dairy. I found out what I can live without all of them.

Sticking with it as its really the first WOE that hubby really likes and no, he doesn't miss cheese a bit

Yes, I'm pretty sure chickpeas (a.k.a. garbanzo beans) are legumes.
I'm also falling behind in my squats, but I will catch up and meet this challenge!

Dang! Back to the drawing bored lol


... Today off to spend the day at the water park AGAIN! DD(12) has invited like 20 kids .... ah a teens life right... Summer hasn't even begun and she is making sure she walks away this year with a tan since last summer she spent 24/7 at practice! This year since it's a new level only 22 hours of practice.. anyone want to trade my DD for a NORMAL kid for a while

Yes and no... I HATE when she's on Beam and does a back handspring or tuck... In fear of her splitting the beam... and I think the worst is a front tuck because it's a BLIND LANDING... And bars... I alway fear of her hand not hitting it.. to top it off we watched Final Destination5 which had a gymnast that dies from a simple bail (high bar to the low bar)

I just made Fried Zucchini ribbons and YUM!!!!!! really simple too!

Use a potato pealer to make the ribbons... (only go down to the seeds - keep that for another dish)

and fry... you can use a Homemade Garlic style mayo to dip or eat as is.. they are YUMMY!

I wanted to make the ones like at Macaroni Grill but haven't figured out how to make them yet.. Never had them just saw them on commercial

I like that zucchini ribbon fry idea. I love ribbons PERIOD. Add some olive oil, a little lemon juice and crumbled feta or goat cheese. Yikes...now I'm hun-gar-ee for zucchini

Can I join you guys here? I did whole 30 for Jan and have moved to more of an 80/20 diet adding dairy & the occasional non-primal things back in.
I need to stay accountable or I'll be back to the off plan things being far more than 20% of my diet. LOL

Kylie's mom- my boys play water polo and right now they are on a "light" workout schedule because of the season. With that said, my youngest spent 6 hours in the pool yesterday...
I understand her schedule and the fact that it makes life crazy for the entire family.

State is the last weekend of next month... we aren't doing Nationals this year... in hopes of making the state team in the Fall... so Light Practices are coming...

So...... I decided to start posting my meals to be held more accountable ;-)

B - 1 eggs, 2 slices of bacon 1/2 an avocado
S- green tea plain
L - Salad - Lettuce, cuc's, olives, hard boiled egg and the other 1/2 of avocado w/ balsamic
S?
D? - DD at Gym... I'm thinking just a hand full of nuts or maybe a greek yogurt? maybe nothing depending on if I am hungry......

Whatchya eatin today???

And Speck... you are pulling ahead of me watch out... I'ma comin'!

I'm going to post my meals here too...
While I would like to lose a little weight, mostly, this is about being healthy. I have never been much for breakfast, but I am trying to eat breakfast more often. (with that said, I just had coffee for breakfast yesterday)

Yesterday-
B-coffee w/ heavy whipping cream
L-waldorf salad (leftover chicken, mayo, half a small apple, a handful of pecans, celery)
D-"pub burgers" w/ mustard, tomato and in a lettuce wrap, red wine and a few strawberries after dinner
(the pub burgers are a recipe created by my DS- ground beef, chopped onion, undercooked bacon, garlic, salt, pepper mixed together like meatloaf, made into hamburger patties and cooked on the grill)
Exercise- push-ups, squats, planks and a walk

Speck, I have mostly followed Atkins for the last 10 years. I was majorly overdoing the dairy and "fake" foods. Even my kids were lecturing me on the artificial sweeteners etc.
Anyway, there are some great recipes from other lc cookbooks that work well for paleo some with a little modification, others as is. The waldorf salad was always one of my faves, no modifications needed, except I was less uptight with measuring than when I was counting carbs and just threw in a handful of this or that.
One of my other faves that I've modified is a roasted red pepper soup. The original recipe called for cheese as a garnish and heavy whipping cream. I made it with coconut milk a couple of weeks ago & just left out the cheese and it was even better than with the hwc.

Sorry Missed yesterday REALLY BUSY! Boss' daughter had a BABY GIRL!!!!!

"Persaus Isabella" 6 pounds 3 ounces

Anyway........

Today -

Breakfast: 1 Avocado + 1 Hard boiled egg and yes COFFEE! Even though it's a bean... I am having a HARD TIME giving this one up!

Snack?

Lunch - Broccoli w/ Tomato Sauce - YUMMY

Snack?

Dinner - Broiled Grouper w/ lemon, olive oil and spices.... as a side it's still up in the air

I accomplished 75! squats this morning... I am almost there!
