Meal 1 -> bacon, eggs scrambled with coconut cream, beans
Meal 2 -> meatza (crust: ground beef, ground pork, egg, coconut flour. Top: jalapenos, tomato, mushrooms), salad, 1 pear and 1 apple.

Snack: peach drizzled lightly with ghee, stevia and cinnamon and microwaved
S: chicken breast w/spinach
Snack: maybe a pumpkin coffee (strong coffee, almond milk, pumpkin, cinnamon and stevia)

Pork in Portobello Cream sounds good! I may make some but I don't know if I will use real cream or coconut milk.

I am not sure about me and coconuts. My lips are still a little swollen.

I made some paleo brownies with coconut milk and a custard with coconut milk. After I ate the custard I became extremely conjested.

I am really hoping that I have not developed an allergy to coconut

Oh that sounds bad! Maybe the anti-viral properties are not agreeing with you? Do you use the same brand all the time?

Ropa Vieja sounds really good! It's supposed to be cool here this weekend, that will go on my next high cal day (Saturday) menu -thanks!
