I keep mine simple.
Grass fed ground beef (because I have some on hand, otherwise very lean whatever-brand); canned tomatoes, jalapenos, onions, zucchini (I dice this "bean size" and add it about 10 minutes before it's finished cooking), chili powder, garlic, cumin, oregano, salt, pepper, additional cayenne if needed.
Just check labels for the "cleanest" canned tomatoes you can find

I make mine just like regular chili just with chopped cabbage instead of beans. LOVE it. I have folks I work with eating it just cause it is so good.
