Maybe a peach later today. I have to enjoy them before they get too sweet lol! |
I'm going to experiment with dinner. I'll keep the tilapia and just pan fry it with a little coconut oil.
I have some frozen spinach thawing, and a little canned pumpkin frozen so I'm going to try and do a spinach and pumpkin curry. It sounds interesting, will probably look just awful though lol. Spinach, pumpkin, coconut milk, curry paste. Yep, definitely will look like a mess! |
breakfast-coffee with cinnamon and whipped coconut cream.
just had a spinach, coconut milk (from can), frozen cauli, 1tbl cocoa blended in my vitamix, then had salmon and a small sweetpotato (post workout) I am trying some intermittent fasting so I am not sure what I am going to do--I might have steak and some veggies in a couple of hours and then be done for the day and then eat again after my run tomorrow with a 4 hour window and then fast. Question Laura Lee about the coconut. You keep the can in the fridge? Do you use the liquidy part or the solider part for your coffee (yeah yeah I know, those aren't real words :p)?

I use Whole Foods 365 brand. I do not shake it; I put it in the fridge; still, do not shake, open it; spoon thicker white part into my kitchenaid stand mixer; blend with balloon whisk for 5 min--comes out just like whipping cream. I store it in the fridge in tupperware.
It is phenomenal with fruit for a dessert but this is a slippery slope for me so I do not indulge that much. Then the liquid clear part at the bottom of the can I use in my blender mixes. Laura Lee |
