What's on the menu for Sunday?
 
Breakfast coffee fried egg (butter) some coconut flakes (yum)
Lunch: 4 lettuce wraps with turkey avocado red onion homemade mayo
Dinner; burger lettuce onion tomato
later; thinly sliced bbq flank steak, some smoked baby clams, sardines

it was a strange eating day

Edited to add, I do use grass fed butter (Kerrygold)

What's on the menu for Sunday?
 
B: just coffee w/sweet n low and half & half
D: going out so a grilled sirloin or chicken breast; broccoli or other non starchy veggie; salad (taking some evoo and bragg's organic vinegar for dressing)
S: if I'm hungry: salmon and salad

Had a lovely brunch this morning.

Egg white omlette
3 strawberries
Protein shake

Ended up at dinner with a grilled sirloin and grilled shrimp with a side of zucchini and a salad.

B: 3 eggs scrambled in CO, 3 slices bacon, coffee w/hwc, water
L: carnitas, grilled green onion, water, coffee w/ hwc
D: bun less burger w/ green salad

L- 1/2 lb of Bison Kidney (grass fed) Curry, Onions and Mushrooms fried in Bison fat (also grass fed and rendered by me)
D- The rest of the pound of Bison Kidney, Onions served over 2 pastured Duck eggs fried in Bison fat.

Was heavy on the bison today.

Going for Pork tomorrow.

I found a meat source on the eat wild website in Loveland, CO. The owners actually own the heard of bison they sell in the store.

It actually tasted quite a bit like the liver and had a consistency more like heart muscle if that makes sense. It wasn't bad, but I like the taste of muscle meat much more. I know that eating offal is good for you, but I think we should consume it in the same kind of proportion we find of the animal itself. I also tried the bison tongue a couple days ago. Let me tell you, that there is a part of the tongue that is incredibly tender. I mean an almost velvety texture that just melts in your mouth, and then there is the rest of the surrounding meat that is like a soft gristle you can chew and chew and never manage to break it apart.
I'm really glad I found a source to try all of these different parts. While I'm not entirely enthralled with some of them, I realize that there are none so far that I can't enjoy. I guess I feel more in touch with my paleo self because I am not wasting parts of the animal that was harvested to provide me with only the tastiest bits.
For tomorrow, I have some pastured pork, but I also have some bison large bone sections with the marrow inside. I have to admit, I'm really looking forward to seeing what that is all about.

Someday I may get brave and try some offal, I wish it had a different name lol
I have a hard time eating liver, its strange because I love variety.
Thanks for the great explaination, oh I do like moose, my son in law gave us part of his he got.
