I have a very simple egg salad. Boiled eggs chopped roughly, a few spoons of mayo, a little olive oil tbe thin if necessay, a small amount of chopped spring onion, salt and pepper.

You could ditch the onion and add something else.

Another egg salad I love is chopped boiled egg, tomato and avocado with salt and pepper and some olive oil to give it a bit of a gloss

When I have egg salad (I rarely do unless I'm doing a 2-3 day egg fast) my recipe is:

a few hard boiled eggs chopped
2 tablespoons of mayo
mustard (as much as you like/want)
a teaspoon of sweet relish/dill relish for a little "zing"
paprika sprinkled on top

Not the most exciting recipe, but it works for me.

I do mine with cut up red salad onion, whole egg mayo, chopped walnuts, salt, pepper, capers, and chopped up gherkin....I add some ham cut up from time to time also

qurly - I love a good egg salad, but mine is very simple. I just use mayo and mustard to taste in cut up boiled eggs with a little salt.

I went down today! YAY! yesterday was strict meat and egg. For me strict meat and egg includes a little cheese and HWC


Yesterday's Menu:

B: Sausage w/cheese
L: 6 wings with bbq sauce and ranch
D: decaf coffee w/ 1/4 cup home made whipped cream and 2 T HWC

did better on my water and got my running done last night!

Good Morning!

I wasn't a complete success yesterday as I had an Atkins bar (HAVE to get rid of these!!!), but showed a tiny drop on the scale (-.04). Today I will have egg salad only for lunch and supper and promise to stay on plan.
However, tomorrow night I have a function (Taste of MN) so I'll do the best I can with low carb!

Great Job Lori! Awesome new picture/avatar what a beautiful happy family. I'm going to follow a page from your book and go strict the next few days to try and discover how in the world I gained 0.4lbs in the past 24hrs.

Thanks NAF and great job staying on plan. I think we are going to fluctuate, BUT the times I fluctuate the most is:

1. Not enought water
2. Eating after 7PM
3. Eating too much cheese or splenda

YMMV

Wearing a polo t-shirt comfortably that has been in the back of the closet for the first time in 2 or 3 years. It was one of those situations where it was originally too tight/uncomfortable to wear b/c of my gut/stomach. Not the case anymore! Gosh, I haven't worn this (for more than 5 minutes anyway) in forever! Go me!

Atkins Bars are my demise too. While you're at your function ask yourself if tomorrow you'll look back and say "I'm so glad I had that.... or I'm so proud of myself for skipping something that meant nothing"? You can do it!

I bought some bacon that was on special, lower fat version. I ate it, tasted great. Same as regular bacon. Think it was turkey bacon, nothing unnatural. My toddler eats bacon every morning. He would not even touch it! Lol.
Today I bought him his regular bacon, he ate it all up.
How the heck did he know it was different? Lol

My 4 year old eats the fat off whatever I serve up and leaves the lean behind. I 5hink its hilarious but I do wonder what people think when we go out for dinner....

Kids are so intuitive!
My nephew only eats Heinz ketchup. He knows just by looking when it's not Heinz and will refuse to eat it, which means he won't eat at all because he slathers it on everything!

I think that is adorable! Heck, I've done that a couple times myself. And I've gotten looks...lol.

I was hoping I could keep the pound per day trend going but I'm still grateful. I think I am going to go on M&E until the weight stalls, and then do my version of a 1-2 day fat fast. I think that I really have to monitor my fat intake. I tend to lose better with a lot of fat and moderate protein, but I've been eating about 60/40 while on M&E.
I'm going to experiment with around 75/25 in the coming weeks.

B: CO and butter coffee with a hardboiled egg
L: Chicken salad with egg, mayo, and mustard
D: Fuddrucker's with the family for a post-birthday treat (I wonder if I can finish that 1-lb burger... hahaha)

qurly - Congrats on the downward trend!

lilbeetle & suzanna - my kids would eat meat 24/7 if I let them. The only reason I don't let them is because i can't afford it! They do love veggies though, and the good kind...broccoli, cauliflower, cucumber. So I'd say I have a crew that is not the norm of today's society. but I would also say it is probably because I do not bring home any of the stuff I don't think they should eat. That is not to say they don't go and buy it themselves, but I like to think they are making better choices than most. Who knows, right?

TerriMM - Atkins bars do me in too. Once in a while though when I'm going through a "craving" phase, then definitely help me make better choices than the other stuff on the shelf calling my name.

Yeah if I can keep it to only under “special circumstances”, craving phase or on the road with few if any other options, I'm okay too. If they were sold individually I'd be in much better shape.

To fit in more eggs I'll boil up a batch and make deviled eggs and pack them in small grab and go containers. They hold in the fridge well for several days. And steak and eggs for dinner? Oh Mama!

Is it like deviled eggs? I do love deviled eggs!

I make my egg salad with Mayo or Homemade Ranch Dressing, a couple of drops of Stevia, a dash of Dijon mustard, and about 2 tablespoons of ham that I've shredded in the food processor. Sometimes, I'll add bacon bits.

I sometimes serve it in the hollow of 1/2 avocado.
