I miss you guys!
I will be joining you guys later this week in response to yet another day for which I was woefully unprepared. Smh.
I feel like the biggest failure. I told myself I would always have SOMETHING I could eat at all times. Welp... didn't happen last Thursday. I am finishing up the groceries I do have and then will do another round of M&E with you

Okay, they were a do over. Will be eating these for lunch the rest of the week:

Chocolate Peanut Butter Muffins
1 8oz pkg of cream cheese softened
1 egg
2 tbsp of cocoa powder
5 packets of Truvia
1 tsp vanilla
2 tbsp natural peanut butter
2 tbsp HWC

Mix all the ingredients together thoroughly.
Bake at 350 deg. for 15 minutes.

9 Muffins
136 calories, 12.5 fat, 2 carb, 6.5 protein

Hi Erica! Here is the recipe. (And you, too, NAF.)

Cheesecake Pie

--2 bricks of cream cheese (8 oz. each)
--2 eggs
--1/2 – 3/4 cup of granular Splenda (I used 3/4)
--1 tsp. vanilla extract
--1 tsp. lemon or orange extract

Soften cream cheese for approximately 40 seconds in microwave. Stir in other ingredients and beat with a mixer until smooth. Pour into a buttered pie plate and bake at 350 until set—about 20 minutes.

Variations:
For a chocolate cheesecake pie, add 4 tblsp. of cocoa powder and 4 tblsp. of sour cream and replace lemon or orange extract with 1 tsp. of almond extract.

For a chocolate mint pie, follow the above variation, substituting 1 1/2 tsp. of peppermint extract for the almond extract.

Thanks for posting this, Terri. DH wanted me to experiment with a chocolate peanut butter version of the pie, and I think this will work great! I used to make them all into muffins, too, but then got lazy so it all goes into a pie plate now.

hey all I was curious anyone ever feel that they seem like the bottomless pit? I notice like my weight has stalled yet some days seem lighter end of it all and up and such but same weight just either few ounces lighter or heavier..

I seem right now to be at a 2050-2350 area range like..
Its weird i was doing well then notice maybe i ate more then thought yesterday and ended up on high end like 2350 which i didn't notice till today .. what I did notice my weight was on the near 1lb down area verse the other day being less calories and heavier side of my weight.

I know i just have 3lbs to drop ..not in any rush but was curious if this is a good thing or bad to be more stronger appetite, since switching from lean proteins to more fat at every dish.

went from 20-25% fat to now having about 50% fat and still trying to go up from there but wonder is it my body getting use to change before I drop any more weight? Or do I need to keep adding more fat or reducing it?

I've been using alot Mct oil as well on every dish I eat sometimes I don't really weigh my food no more since scale broke and I don't measure the mct oil but I use the cap to pour it on or from bottle without thinking its more then a half tablespoon that i just estimate i'm using. lol

However what do you girls think?

Happy Valentine's Day to my M&E family! I could not let the day go by without making a quick stop in to tell you all how grateful and blessed I have been to have you all to vent to, and for your feedback, and support the past 10 months. Wow, 10 months and what I am estimating is 50 lbs. gone [ didn't have a scale when I very first started; but I do know I am down 6 pants sizes and the compliments and kudos from co-workers and family keep coming]. So, thank you all esp. to Tashydoll, I owe you a lot; you have truly been a blessing to me... as have all you ladies (and gentlemen if any of you are lurking, but I think I'm the only prominent guy here.. lol).

Hello everyone! And to my fellow U.S.A. colleagues on the East Coast I hope you are no longer snowed-in due to this arctic blast hit, and life is continuing as usual with work/school/etc.

Virginia was hit hard by the Winter storm as were a lot of states, which made it hard to focus on anything, but the weather. However, like all things, it has passed and it is sunshine-y day. This week I lost 1.0lbs. Nothing to blog about, but it is a loss just the same.

Another victory is this makes the 3rd week of actually staying in Twoderville.
For those of you who do not know, this is the 3rd time I've gotten so low in my weight I have entered Twoderville, however the difference is this go-around I have stayed. The previous two times I've been so happy and celebatory that I would eat off plan and the very next week be 305+. But, I'm proud to say I have been dwelling in Twoderville for 3 weeks now. Kudos to me!


I do hope all is well and that everyone is doing well.

Not sure, Natosha. I don't try to limit my fat, as for some reason I do quite well when my calories are about 70% from fat--even better above that. I don't use MCT oil, so I'm no help there, either. . . Is there a reason you have a stronger appetite lately--such as increasing your workout time or intensity? Also, I don't understand why you have been eating lean meats. As far as I'm concerned, fat from meat is a good thing!

Speaking of Valentine's Day, I celebrated with half a slice of chocolate covered bacon. . . Yeah, chocolate covered bacon. Convinced DH to stop off for a few chocolate covered strawberries--small ones, half a pound, which we split--and the bacon in the display case had me curious. It was just okay, but the choco strawberries were a real treat!

For those of you who do not know, this is the 3rd time I've gotten so low in my weight I have entered Twoderville, however the difference is this go-around I have stayed. The previous two times I've been so happy and celebatory that I would eat off plan and the very next week be 305+. But, I'm proud to say I have been dwelling in Twoderville for 3 weeks now. Kudos to me!

Amy, chocolate covered bacon !!!! Just sounds a bit wrong to me, hahahaha! So I'm happy to be back on board with a bit of M&E action this week which means I will be spending more time with my M&E family Plan on doing 3 or 4 days this week but not sure how I'm going to split it up...will play it by ear

Today's plan:
B: Coffee with HWC, 2 x scrambled eggs with some chopped up bacon
Sn: Coffee with HWC & CO
L: 3 x pork sausages plus cup of green salad and homemade vinaigrette
Sn: (if needed) boiled egg or frozen iced decaf coffee
D: Lamb chops plus cup of green salad and homemade vinaigrette
30 mins of elliptical trainer, 1 or 2 rounds of HIIT
Loads and loads of water (it's SUPER hot here ATM )

While I am thinking about it let me ask...

Joan, Terri, and tashy-- was wondering if any of you ladies were still doing the Atkins '72 in your WOE still or is the 'guinea pig' studies over with for now? I am still including a dill pickle sporadically during the course of the week, but not everyday.

NAF, I'll do it while I'm on M&E and I'll be including up to 2 cups of salad greens with my meals (comprising of cos lettuce, cucumber and a homemade vinaigrette) When I'm not doing M&E I just do my normal WOE, which is Primal so I'm probably not a good test case
