Hey y'all.

Made chicken meatballs last night, I think I've developed an addiction.

So far I seem to have lost 8lbs.

Clothes are fitting much better, I feel better.

I've developed a craving for shrimp, so a favorite snack has become shrimp sauteed in butter with a little Old Bay Seasoning added.

Drinking unholy quantities of water.

I hope everyone is doing fabulously! Of course, y'all are fabulous, anyway! ;-)

Way to Go Erica You're the Bomb!!

I think I'm going to have to try those meatballs when DH gets back into town. He needs some new snacky/lunchy foods. He's a brown bagger so keeping it interesting is always a challenge. Any other brown bag ideas from your arsenal of great recipes would be very welcome!

Hello all. I hope all is well.
Well.... I need to report that for this week's weigh-in I gained 0.8lbs.
I'm actually pleased with that, because if you saw all the "cheating" I did this week it could have very easily been 8.0lbs on the scale, but no.. it only reflected 0.8lbs gained. Thank goodness for plain water and my low carb meatball stew, and all the stairs I have to walk at my job. That's all I got to say. haha. I'm going to try to behave next week so I can report a loss for Valentine's Weekend!

Thank you, kindly! I've actually lost a little more-- and the inches are really showing. My clothes are fitting again!!!

So, this is the week I'm planning on making Shrimp Balls-- much like I do the chicken meatballs-- I'll let you know how they turn out.

I'm glad you asked-- It has fillers. In bold it states that "this product contains Soy and Wheat." 6 meatballs = 5g of carbs.

Ingredients (according to the bag) = Meat ingredietns (pork, beef), mechanically separated chicken, water, textured soy flour, bread crumbs... contians 2% or less of salt, dehydrated onion, spices, sodium phosphate, sugar, flavorings, citric acid, caramel color.... Huh, with all of this they are still "America's favorite meatball."

Despite the fillers and wheat and flour, I have still been able to lose weight ever since I started eating them; except for last week when i went out to fast food places to eat 3x during the week, but that's due to the fast food.. not the meatballs.

Hi All,
Well so far so good on my low carb/alt calorie experiment. Down 5.5 in six days. I started to stall out and feel real tired mid-week so I upped the fat and reduced the protein a touch and that kicked things in again for me. I’m back into my 6’s today so very happy about that! I think I’ll continue to up the fat and head toward fat fast. For some reason my body seems to really respond to that. Hope everyone else is doing well.

Kudos Erica – isn’t it great to start feeling comfortable in your own skin again!

NAF – nice way to dodge the bullet and still live a little. WTG

You are doing amazingly well, then! It tells me, that you've basically been able to find your Personal Carb Limit--like , how many carbs a day you can consume and still continue to lose weight...

I may riff on your recipe, though-- sounds yummy. :-)

to my M & E family! I see I have missed so much--and that's just from reading the current page. I feel like I need to catch up reading posts, but I'll have to do it little by little. Work deadlines have been brutal for the past several weeks, but I am finally seeing the light at the end of the tunnel.

The scale remains at the same place, but that's okay. I had been sick in January so skipped the fat fast. I'd like to do one in February, but it will have to be after Valentine's Day. I plan on whipping up some LC treats of some kind. Aside from cream cheese pie, my meals have been mostly M & E. DH seems to need a veggie, but I do manage to sneak in a meal of only chicken wings without getting any complaints from him.

I hope everyone is doing well!

I may give this a shot in March, if I don't see much progress-- I bought Dana Carpender's Fat Fast book and have been wanting to try out the recipes. Very nice book, by the way.

I like it too. I was using her method for Shiritaki noodles last night. I have a great recipe for Alfredo Sauce, put that over a the noodles with some crumbled bacon.

Yes Ma’am! So easy and SO yummy!

Alfredo sauce

2 sticks butter
2 brick cream cheese
1 1/2 cups HWC (2 cups if you want it a bit thinner)
1 cup parmesan cheese
garlic and pepper to taste

melt butter and cream cheese together with spices over med high heat. Whisk until smooth and creamy. add cream. Heat to just under a boil. Add cheese. Heat and stir until cheese melts and everything is creamy. As it cools it will thicken. When you refrigerate the leftovers it will get solid, but it reheats great. It may separate a bit when you reheat it, but it stirs together fine.


Tonight I'm trying some peanut butter chocolate muffins. Wish me luck! I'll post the recipe IF they're eatable.
