Hi Oro - Thanks for your encouragement. I really don't understand why hubby is reacting this way. I did the normal Atkins diet several years ago and he had read the book and was very supportive. I'll have to get him to talk with me about it. I don't post much on LCF or even my FB. I live on the computer during the week at work, and I just tend to avoid it during my evening hours. I usually catch up on everything over the weekend. I'm just now reading here cause I've been outside all day. So pretty today! My weight is much the same as last week, but I'm gonna get there!!!

It's interesting to note that I'm under my sugar & carbs and over in fiber compared to last week but over in calories by 2000. I know we're not "supposed" to count calories but I count everything so I can analyze it to death when things don't work they way I think they should.

Since the high calorie item on my plan is the muffin in a mug, I'm cutting back to 1/2 muffin.

Tofu Mac and Cheese recipe
If you checked out my food list for the week you probably saw this and said WHAT?!? I did, but I had to try it because it's been 6 years since I've had mac and cheese. It was pretty darn good!

Mac and Cheese Tofu ala oro Serves 4 SC = 2.5/0
Adapted from: Low Carb Mac And Cheese Recipe | Low Carb 360

300g (12 oz is 349g) firm tofu
8 ounce package of shredded Mexican cheese
1 whole egg and 2 egg whites, beaten
1/4 cup heavy cream
1 dash of cayenne pepper

Top with:
8 oz canned diced tomatoes (drain the juice off)

1 Place the Tofu in a strainer and squeeze out any excess water.
2. Mash tofu well, leaving a few chunky pieces.
3. Mix all the remaining ingredients together.
4. Bake at 350 degrees for 30 minutes ( top should be slightly brown).
5. Top with tomatoes and bake another 15 minutes.

Nutritional Information:
Sugar 2.5g
Carbs 2.25g
Fiber 2.7g
Protein 14

Is anyone still on this thread? I am new to LCF and love the BFC. Was hoping to have some ppl to help me stay on track!

I haven't eliminated splenda yet.... I'll give it another try later on, but I do ok even with it.

Looking forward to getting to know some of you!

I just heard about this diet today from the Rachel Ray program it sounds interesting. I dont know much about it though. I have been low carbing for about three months this time and doing well but still have lots of belly fat and would like to find out how the program works.

I was on my library's e-book website page looking for the book Wheat Belly, and the Belly Fat Cure popped up so I just checked it out I'm brand new to eating lc and going into it I decided to eat primal/follow Mark Sisson's pb plan. But, I'm already realizing that I may need something with more structure. I'm excited to read this book and see if it's a good fit!
