Congrats!! A loss is a loss!!! Of course it's not my business but have you ever thought of changing your meeting time. It's not cool to feel so much pressure from other members!! That's why I stopped going to the meetings at work. I didn't feel pressure or anything but I got tired of people asking me how did it go for the week. If you don't want to switch meetings then maybe you can tell them to back off a bit. I can't imagine having to deal with that. Please remember that you don't have to prove anything to any of those people!

Hey everyone!!

I'm sorry that I haven't been posting much lately. I've just had to concentrate on some other things here lately. I did lose 1.2 pounds this week but I still didn't see a new number. I'm hoping next week to see a brand new spanking number! I talked to the leader after the meeting and she told me to stay on track and not think that I can slip since I saw a loss this week. I know she's right so I'm going to stay on track!!! I've got to break this cycle of gaining and losing the same few pounds!! It's crazy!!!!

I have to run out and buy some more celery and peanut butter! I plan on making a Shepherd's Pie for the week. Has anyone ever made this? This will be my first time. I hope it's good and I like it!

Cake Batter:

2-3 Tbsp Splenda (I like mine really sweet, so I used and counted stats for 3)
1/2 tsp vanilla

Pre-heat oven to 350 degrees. Beat together egg beaters, milk, applesauce, vanilla, and coconut extract. Add in both flours, baking soda, Splenda, and cinnamon and blend again. Grate or chop enough carrots to fill 1/4 cup (I used ready-to-eat mini carrots and my hand-chopper and made this task go very fast). Stir together the carrots, pineapple, and raisins, then gently stir into cake batter. Pour into a small SPRAYED single-serve baking dish (I used my smallest one for this recipe, 500 mL and about 5" diameter. If you doubled the recipe you could probably make this in a loaf pan if you don't have a single-serve dish). Bake for approx 30 min or until golden and knife comes out clean. For frosting: cream together all ingredients until creamy and refrigerate until needed. Let cake cool a bit before frosting. Carrot cake is best served chilled, but pretty awesome the other way too. LOL.

ENTIRE RECIPE: Approx 270 cal, 0 fat, and 15.5 g protein (264 cals per recipe if only using 2 Tbsp Splenda in frosting). Counts as your entire breakfast (entree, dairy/protein, and fruit). Wonder how that works? The flours, carrots, and Splenda basically count as your entree. The dairy/protein is made up of the egg beaters and milk in the cake batter, and all the FF cream cheese for the frosting. The fruit serving is a combination of the applesauce, pineapple, and raisins.

HALF RECIPE: Approx 135 cal, 0 fat, and 7.75 g protein (132 cal if only 2 Tbsp Splenda in frosting). Counts as just your breakfast entree, or a dessert. You'd better have someone to share this with though for a dessert, as I promise that you won't want to stop at just half.

This recipe looks tasty!! And the pics look yummy too!!!

I love carrot cake...yum....

I don't have anything planned today. Just a little cooking and getting ready for the week. Yesterday I went with my sister and had a pedicure. It was only my second time ever getting one and it was so much fun!!! I need to go more often.

I'm actually going to try to go to 2 meetings a week. I really like the Thursday lady....she's chock-full of info. The Wednesday meeting is more of a coffee group, LOL. I think the 2nd meeting will help me stay focused more and hopefully help me deal with pressures from people. It was nice going to a meeting where no body knows ya, and when I said I lost -0.2# it totally kept me off the radar

The BBQ is at 1:00. I'm making my Turkey Pie and warming up some Zero Point Soup. I feel ready !! I want to leave Saturday far behind. It doesnt help either that TOM is kicking my butt today either.......but I'm drinking my water like a good girl and peeing like a racehorse

Cheesy Shepherd's Pie

Prep Time: 10 min
Total Time: 35 min
Makes: 4 servings, about 1 cup each
1 pkt. (1/2 of 11.75-oz. pkg.) VELVEETA Cheesy Mashed Potatoes
1 lb. ground beef
1 cup frozen mixed vegetables
1 cup beef gravy PREHEAT oven to 375°F.

Prepare VELVEETA Cheesy Mashed Potatoes as directed on package. Meanwhile, brown meat in large skillet; drain.

ADD vegetables and gravy to meat; mix well. Spoon into 8-inch square baking dish; cover with prepared Potatoes.

BAKE 20 to 25 minutes or until lightly browned.


I found this recipe on the kraftfoods.com website. I'm going to use plain mashed potatoes and ground turkey to make mine. I'll just add some reduced fat shredded cheese to mine. I'll have to run it through the recipe builder to make sure I have the points right. I know the ww site has a few shepherd's pie recipes but I wanted something super simple that I didn't have to buy any ingredients for and this recipe fit the bill!! I basically had everything in the pantry to make it. My kind of recipe. I think I'll like it. Meat, mashed potatoes, cheese and veggies?? How can you go wrong!!

Oh yeah and I plan on doubling this recipe so I better like it because I'm going to have a lot of it.

Hi Everyone!

I have been away for a little while and wanted to check in. I haven't been able to weigh in for the last 3 weigh in before last Thursday, but I was pleasantly surprised when I stepped on the scale Thursday and saw a loss of 3.2! I know that is not a lot of weight, but it was a big accomplishment for me. We had traveled over July 4th and it is amazing what the little voice in my head saying "You weigh in on Thursday" does for me. The "little voice" helped me to watch portion size and not stray too far off course! Normally I would have broke down and just eaten what I wanted and started over on Monday, but that excuse doesn't work for me anymore!!! The accountability of stepping on the scale each week is working for me.

This weekend I went and bought a new pair of walking shoes, so no more excuses for not walking from me! I went tonight for 1 mile.
