Rockstars! Tried another recipe from the Hungry Girl cookbook...going to have to type it up for you all...

Death By Chocolate Cupcakes (dh is taking them to work tomorrow for a potluck). A decent sized cupcake, 2 points (around a 100 cals for anyone counting). FABULOUS.

DH has scarfed 3 or 4 down already...and he took some over to the neighbors. there will be 12 left for him to take tomorrow.

I may even take a couple to my office...chocolate may help soften the blow that I'm quitting -- tomorrow is d-day...the day I give my boss notice. I only hope he takes it and doesn't tell me to to pack my stuff and leave

We doubled the recipe and it made 28 cupcakes. Next time, I'll make one batch and fill them up a bit more. Also, since there is no frosting on these, I sprinkled a tiny bit of powdered sugar on top to make them look pretty.

Death by Chocolate Cupcakes



Ingredients:
2 cups moist-style chocolate cake mix (half of an 18.25-oz. box)
Two 25-calorie packets diet hot cocoa mix
1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)
2 tbsp. semi-sweet mini chocolate chips
1 tsp. Splenda No Calorie Sweetener (granulated)
1/8 tsp. salt

Directions:
Place chocolate chips and the contents of both cocoa packets in a tall glass. Add 12 ounces of boiling water, and stir until chips and cocoa mix have dissolved. Place glass in the freezer to chill for 25 minutes. Preheat oven to 350 degrees. Once cocoa has chilled, give it a stir, and mix with all other ingredients in a mixing bowl. Whip batter with a whisk or fork for 2 minutes. Spray a 12-cup muffin pan with nonstick spray, or line it with baking cups. Evenly spoon batter (which will be thin, but don't worry, your cupcakes will puff up!) into the pan. Place pan in the oven, and bake for 15 minutes. Cupcakes will look shiny when done. MAKES 12 SERVINGS

I'm more accepting of it now.......the meeting gals have such a high expectation of me that it drives me a little nuts. For the most part they are supportive, but there are a few crackheads "Well, if Regina stayed the same then it's OK that I gained a half pound" one lady said.

I'm the poster child. Nice to be all important, LOL but it does stress me out a bit

I only gave out my blog info to one lady......there was a guest leader today so it wasnt the same chatty group. Next week I'll hand out business cards promoting myself

I was approached on the playground by one of the moms I didnt know. She said "I've been meaning to tell you you look fabulous "

DD's Godfather came over with coffee (havent seen him in over a month) and every time he sees me he almost falls over in shock. Tonight he said "Reg, I've never seen you this skinny"

Go me . The ****ing scale can't bring me down, because I am a ROCKSTAR !!

I had a friend tell me today that she really could see that my butt has really transformed. She said that I used to look fluffy and now it is round and tight! I'm so glad all the hard work is being noticed, even if it is the ladies from work.

Good luck to our Thursday Weighers.

Today I will be packing for our trip. Tonight and Friday I have to work, so it has to get done today. We are staying at a friend's condo so I gotta make sure I personally have food for the plan.......I'll be up in the mountains somewhere where the local supermarket has 6 isles (probably no low point specialty items).

I made and froze a Turkey Ench Pie so that one meal is covered every day. I'll bring a container of egg beaters, box of 2pt oatmeal, fruit and snacks.

After staying the same (gotta remind myself that it was TOM) this week at WI, I'd really like to lose a pound on vacation. Doable? Not sure.

My next trip is in August for a weekend with a girlfriend to PA to see a SASCAR race. THAT is going to be difficult I think.......all that tailgating, beer drinking and crap.

The kids have a ˝ day today, so I prob will be going down to the beach later.

On the run today......... I did weigh in, I stayed the same Honestly I don't deserve that so I can't complain.

I have a meeting with a potential new client today, wish me luck. Then I'm off to dinner with my mom. Oh I got the hair cut and colored yesterday. She did a great job!

Hi Reg,

yes, they have training camp at Hofstra.
I' ve never bought season tickets, it's hard to commit to traveling to Jersey for 8 games. I'm ok with going to at least 1 game a year.
