I updated my gallery pictures Faces of LowCarbFriends - Message - Powered by PhotoPost

My roots are coming in BAD, so I decided to work on that this morning. After that......errands and exercise.

What does everyone have planned for today?

I'll be making my fav dish Turkey Enchilada Pie Weight Watchers Tried and True Recipes

Instead of using the jalapeño peppers, I buy the diced tomatoes in a can w/chilies in them (drain liquid). Same result, less prep and, even when wearing gloves while working with jalapeño peppers I seem to get the juice in my eyeball

Tomorrow is WI and we shall see if I was able to get rid of the Father's Day Brunch fat

Twink - I wasn't an Alton Brown fan until my brother brined a turkey. OMG! It was divine! I started watching his show then, and he appeals to the scientific, logical aspect of my brain. He really seems to be one of those people you either love or hate, ya know?

Oraki - I need to stop reading your food tracker! It makes me hungry! As for the graham cracker crust, I have a recipe saved that I want to try as soon as I find/make a lower fat graham crust ... you mix equal parts chocolate pudding and cool whip (the lite/SF/FF varieties of your choice) and fill the crust, topping it off with a couple Tbs of mini chocolate chips. I was thinking maybe add a few drops of mint extract to the pudding before folding in the whipped topping. Freeze the whole thing for a (hopefully) grasshopper pie. And good luck at the vet's! I hope Shaq is ok!

Shelby - I hope you feel better soon!

Stacy - Welcome! Congratulations on your second week with WW!

Janice - Welcome to you, as well! I am on flex right now, but planning on switching to Core eventually ... right now, I'm hooked on the ease of the flex plan ... I like being free to eat almost anything, (and I NEED a dessert every day! ) and being able to rely on frozen dinners for lunch a few days a week. (Dinner, too, especially on days I work out after work and don't feel like cooking) BUT I think, ultimately, core is what I need for most of my weight loss.

Dedicated - I see the Subway "S" in there! I'll have to look some more and see if I can spot more ... LOL

OMG! We have been using that brine on our Thanksgiving turkeys for several years now!! It is so good! Makes me want turkey!

I am posting the recipe in case you (or anyone else) would like to have it, since I am leaving soon for my lovely 4 hour nursing class, and I won't be back for awhile!

1 Ready Crust 25% Less-Fat Graham Cracker Ready pie crust
14 oz. fat-free sweetened condensed milk
8 oz. fat-free egg substitute
8 oz. fat-free whipped topping
1/2 cup fresh key lime juice (or bottled)

Preheat oven to 325º F. Place graham cracker crust on a baking sheet; set
aside.
Whisk together condensed milk, egg substitute and lime juice. Pour mixture
into crust.
Bake until center looks set but still slightly quivery, like gelatin, about
15 minutes. Cool completely on a wire rack. Transfer to refrigerator and chill
completely, about 1 to 2 hours.
Spread whipped topping over cooled pie. Cut into 10 slices and serve
***I just pour the mixture into individual shells and bake***

The crusts are 3 points each. For some reason when I looked at them in the store I figured they would only be about a point a piece. That's what I get for not pulling out my points slider. That's okay though I'm still going to use them. It'll just be a few more points than I thought.

Not much else planned for the day. Taking Shaq to the vet was enough! I have a few things to do around the house and that's about it for me. Maybe watch a movie and enjoy the rest of my day off.

I bet your weigh in tomorrow will be just fine.

You know I've heard other people rave about Alton Brown's brined turkey. I'm going to have to try that one day!

I love flex too!!! I love the fact that I can eat what I want (within reason) and count my points for you. I have issues with feeling deprived and being told what I can't have so flex works perfectly for me. Most of the time I don't even eat a lot of the things that I could eat by following flex. I think for me it's knowing if I want that piece of cake then I can have it if I count the points for me. 98% percent of the time though I don't bother with cake. I guess reverse psychology works for me.
