Rice diet recipes Jan '08

post your favorite RD recipes here
heres the recipes from Dec '07 thread
No Salt subistute
5 tsp onion powder
1 TBSP garlic powder
1 TBSP paprika
1 TSBP dry mustard
1tsp thyme
1/2 tsp white pepper (can use black)
1/2 tsp celery seed

Salt=less suprise
2 tsp garlic powder
1 tsp basil
1ts[ oregano
1tsp dried lemon rind
(or dried lemon juice)
put ingred in blender and mix well store in glass contaner add a few rice grains to prevent sticking

Veggie panini
2 slices W/W bread
mix 1 TBSP garlic w/ 1 TBSP evoo
spreead on inside of bread
place fresh spinach leaves top w/ thins sliced bell pepper
add tomato slices or other veggies of choice
spray grill with "pam" and taost bread
you can also add portabella mushrooms and if you are on a dairy phase add
LS/LF cheese slice

Salad dressings
Rice "house" dressign
1tsp honey
2 TBSP basalmic ving
pinch black pepper
pinch dried oregano

Honey mustard dressing
1tsp mustard powder
1tsp honey
4 TBSP water
pinch black pepper

"any flavor" salad dressing
any "flavor" vinegar
(rice, red wine, basalmic apple ect)
any "flavor" SF seasoning
(mx Dash, mr spice)

Theresa's Favorite Dressing (RH staff)
2 slices tomato
1 slice onion
4 slices cuke
1/4 C red wine ving
1 TBSP fresh garlic
1 pk splenda
2 TBSP water
put in food processer and let er rip

salad dressing/ meat topping
boil one cup water
add
1/2 C dry mustard
2 TBSP honey
1 TBSP garlic
1tso black pepper
whisk til well blended
serve hot on meats or chill for salad dressing

Rice cake pizza
1 rice cake
2 TBSP NSA tomato sauce
(or Rice house tomato sauce)
1/2 tsp grated parm
spread 2 TBSP sauce on RC
sprinkle with Parm cheese
nuke 20 seconds

brown rice soup
6 TBSP butter
1/2 C WW flour
1/2 C chopped onion
3 C LS chicken broth
2 C cooked brown rice
1/2 C grated carrots
1/2 C chopped cooked chicken breast
1 C LF 1/2 & 1/2
Mrs Dash to taste
in sauce pan melt butter and saute' onion
add flour to make roux'
gradually add broth stirring constantly until mix comes to a boil
boil for 1 min
stir in other ingred
simmer for 5 min
blend in the 1/2 & 1/2
heat to serving temp

Hi! Soonie, thanks for posting this RD recipe thread! Here's my first recipe to start with. I haven't tried it yet, but can't wait. I think it will be great to use in making a RD friendly fried rice!


This recipe is from "No-Salt, Lowest Sodium Cookbook" by Donald Gazzaniga.

SOY SAUCE REPLACEMENT
Makes 1 cup, sodium per whole recipe = 27.4 mg, sodium per T.= 1.7 mg

3/4 c. garlic vinegar (1.8mg)
3 T. dark molasses (22.2mg)
3 t. onion powder (3.8mg)

Combine all the ingredients and pour the mixture into a glass jar. Refrigerate and use as needed (lasts about 1 month). Warm and shake well before using.

Nutritional Facts per serving (1T):
Calories:17, Sodium 1.7mg, Total Fat: 0g, Carbs 3.6 g, protein: 0.04 g, Fiber 0.02 g

--- it also says in the book that you can make your own garlic vinegar by heating vinegar slightly and the pour over peeled and sliced garlic cloves to taste, let stand overnight,strain and discard the garlic.

---- if you can't find or don't have dark molasses, you can search the internet for dark molasses substitutes. Brown Sugar is a subsitute - I do have Diabetisweet brown sugar substitute from netrition I may try, because I try to keep things very low in sugar and sugar free. But, I may try just the regular brown sugar since the whole recipe makes 16 T.

I'll have to make this cuz I eat ALOT of fried rice with egg and NSA veg-all

Crock pot rice
2 cups raw rice
4 cups water or stock (beef/chicken or veggie stock)
cook on high for 2 hours or til juice is almost all absorbed
turn off crock pot keep sealed it will continue to cook
(makes enough rice for nearly a week)

Soonies Fried Rice
in non-stick or cast iron skillet
spray with Pam or lightly drizzle EVOO
1/2 onion chopped
4 stalks celery chopped
1/2 bell pepper chopped
garlic chopped (to taste)
saute' til veggies are crisp/done
add 3 cups cold cooked rice
heat thru stirring occationally (toast)
push rice to one side of skillet
add more oil and 2 beaten eggs
cook eggs til done then stir rice and eggs together
season with mz dash or SF soy sauce

French Toast

2 slices whole wheat bread (or 4 if it's light whole grain Sara Lee 100% whole wheat w/ honey 45 cals a slice)
1 egg o r 2 egg whires, or 1/4c egg beaters
1/2 tsp cinnamon
1 capful vanilla

Cook and top w/ 1 tsp no trans-fat margarine and 1 tsp simply fruit spread

I was surprised 1 tsp was really enough

This is really big on the S. Beach thread. We could make ours w/ herbs and not splenda. I made a banana bread. You mix it all in a blender.



Bean Bread

Basic Recipe:
1 15oz. can of white or brown beans. Rinse and drain.
4 eggs (egg beaters work fine also).
3/4 cup of artificial sweetener
1/4 cup dry milk (helps to make it rise)
2 tsp. baking powder
2 Tbsp. oil
a splash of DaVinci SF syrup

Put all of the above in your processor and beat the heck out of it. The recipes says 5 minutes....I found a couple of minutes was plenty. The mixture will be real thin. It amazed me how it raised and baked. I thought it might not due to how thin the mixture was.....no problem. It raised great! Bake at 350* for 35-45 minutes. This is so quick and easy to make. It is fun trying different ways of making it.

Different ways I have made this:
Choc. peanut butter cake. I made this with the brown beans. I added 2 tsp. of cocoa, and a splash of vanilla DaVinci to the batter and a heaping tablespoon of natural pb to the batter and whirred the heck out of it.

Pumpkin Cinnamon cake: I used the brown beans. To the batter I added 2 tsp. of pumpkin pie spice and a couple good spoonfuls of pumpkin. After putting the batter in the pan, I sprinkled over the top a mixture of Splenda and cinnamon.

Banana: Cut back to 3 eggs. Blend 2 ripe banana's into mixture. Some people have added chopped walnuts.

The savory breads use herbs, parm cheese to your liking....to the batter and omit the splenda......
