Blueberry Muffins - 3 points

1 3/4 cup flour
6 Tablespoons sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
2 large egg whites -- slightly beaten
3/4 cup skim milk
1/3 cup canola oil
3/4 cup blueberries
1/2 teaspoon vanilla

Preheat oven to 400 degrees F. Stir together flour, sugar, baking powder and salt. Make a well in the center. Set aside.

In a separate bowl, combine the egg, milk, vanilla and oil. Add egg mixture, all at once, to the flour mixture. Stir until just moistened. The batter will be lumpy. Stirring all the lumps out will make a tough muffin. Carefully fold in the blueberries.

PAM muffin cups or line with baking paper cups; fill each 2/3 full. Bake at 400 degrees F for 20-25 minutes or until golden brown. Remove from pans.

These are great warm or for breakfast the next day at room temperature. You can use fresh or frozen blue berries.

What a great thread. Thanks all for the recipes.

I do not do low carb, although I do watch carbs and focus more on protein.

This is a wonderful recipe collection.

I have this GREAT chicken chili recipe i made up while on ww and want to recheck the points and share it with you. I think it was 4 pts for 2 cups but I want to be sure. If anyone is willing to do it for me let me know I'll post the recipe.

Ok I have a couple recipes that I have gotten at my weight watchers meetings.

Hash Brown Soup
28oz Fat Free, Low Sodium Chicken Broth
1.32 oz Country Gravy Mix
3 cups Ore Ida Hashbrowns with green peppers and onions
1/2 cup water

Boil broth and hashbrowns. Simmer for 15 mins. Mix water with gravy mix and add to hashbrown mixture. Simmer 10 mins until it thickens. Add vegs for additional flavor. 1 cup=2 points

This is delicious! Even my teenager loved it!

Mexican Chicken

4 frozen chicken breasts
1 can mexican stewed tomatoes
1 packet taco seasoning

Put chicken in crockpot while still frozen. Mix together tomatoes and seasonings then pour over chicken. Cook on low for 7-8 hours. Makes 4 servings at 4 points each.

I am eating it right now and it is delicious. Plus the house smells great!

I just made this one.

POINTS« value | 5
Servings | 8
Preparation Time | 20 min
Cooking Time | 60 min
Level of Difficulty | Moderate

desserts | Warm, juicy apples are dusted with cinnamon and nutmeg, packed into a light, homemade pie crust and topped with an oat-based crumb. Irresistible.

Ingredients
  • 1 spray(s) cooking spray, butter-flavored if possible

    For the crust
  • 1 cup(s) all-purpose flour
  • 2 tsp sugar
  • 1/4 tsp table salt
  • 3 Tbsp butter, cut into small chunks
  • 2 Tbsp water, or more as needed

    For the filling
  • 4 medium apple(s), peeled, cored and sliced 1/4-inch thick*
  • 1/4 cup(s) sugar
  • 1 Tbsp all-purpose flour
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp fresh lemon juice
  • 1 Tbsp water, at room temperature

    For the crumble
  • 2 Tbsp unsalted butter, melted
  • 1/3 cup(s) rolled oats
  • 5 Tbsp all-purpose flour
  • 2 Tbsp sugar
Instructions
  • Place oven rack in middle of oven. Preheat oven to 400║F. Coat a 9-inch pie plate with cooking spray.
  • To make crust, combine flour, sugar and salt in bowl of a food processor fitted with a steel blade; whiz to combine. Scatter butter over flour mixture; pulse until dough resembles coarse meal. Slowly add water, adding another tablespoon if needed, until dough comes together. Place dough in prepared pan and press dough up sides and around bottom to form a crust; prick bottom of crust with a fork 5 or 6 times.
  • To make filling, combine all filling ingredients in a medium bowl and toss gently to combine; evenly spread filling over crust.
  • To make crumble, in small saucepan, melt butter. Add oats, flour and sugar; stir to combine and scatter over apples.
  • Bake for 20 minutes. Reduce heat to 350║F and continue baking until crust and crumble are golden and apples are juicy, about 30 to 40 minutes. If pie crust or crumble is getting too dark, cover with foil for last 20 minutes of baking. Let rest at least 30 minutes before slicing into 8 pieces and serving. Yields 1 piece per serving.
Notes
*Use a variety of apples such as McIntosh, Granny Smith and Jonagold.

If you like your apple filling a bit saucier, bake for an additional 10 minutes.

this one?

Quick Pineapple Cake
1 box of angelfood cake mix(follow directions on box)
1 20 oz. can of pineapples(in their own juice)
Fold pineapples into anglefood mix.
Bake at 350 degrees,for about 30 minutes
Top with cool whip
(I used a loaf pan-but I'm sure any kind is ok)

If you are following WW points, then find out the information on the back of
the cake mix,and on the pineapples.Divide the calories into how many slices
you cut the cake into.

Hello and thanks for all these yummy recipes.
I was wondering if you could substitute whole wheat flour for wholemeal flour? If you did would you need more raisning agent as well I am wondering.
I have never bought or used wholewheat flour so don't know what it is like for texture.
