I have a metric ton of coconut... help!

Ok maybe not an actual metric ton!


I do have a ton of CO, coconut flour, canned coconut milk and shredded/chipped coconut I need to use through.

Especially the shredded/chips coconut, I have some that is starting to "yellow" and needs to be cycled through.



What is your fav lowcarb "whole foods" way to use coconut in any of these forms?

WOE: Clean eating, whole foods
Coconut milk: excellent in yogurt, coffee, tea, etc. Good plain.

Coconut flour: pancakes, mug cake, coconut flour bagels (there is a recipe out there somewhere for them) etc. --substitute for flour in almost anything.

Coconut oil: cook with it, make coconut bark, etc.

Coconut flakes: add to yogurt, eat with coconut cream as a warm cereal, add to coconut bark... add to one minute muffins...

Or, you can just send all of it to me, if you like... I pretty much live on coconut products!

Out of curiosity, how long did it take before it started to "yellow?"

And to anyone, is freezing the best way to store extra flakes and flours (coconut ones of course is what I mean.) I would think that would be just fine.

I need to do that!! I have the same issue. I have a ton of those coconut shreds/flakes/chips and they should be in the freezer.

I have loads of the flakes also from TT, and fortunately I have room in my garage freezer....... they're going in there tomorrow.

Funny how I have these staples and simply forget to use them at times.

wow where do you guys get these tons from? I want that! I buy it by the oz at my local natural food store, not too pricey but still....by the oz.
I use a lot of coconut flakes/chips, seems like my body gets energy from this source.

24--I buy mine by the gallon container from Tropical Traditions. I buy them on sale for a really good price. I am like Gracie--I forget I have them and don't use them as I should.

It was about a year actually, and they were in tubs that had been opened.



I would have frozen them but had no room, we have moved around quite a bit the last year and a half for a contract and my chest freezer is in storage.



I buy all of mine from Tropical Tradtions also. I had bought a case (as in 6+ gallons of each) of nearly everything on a great sale they had... we used up all the oil but I didn't use up all of the coconut chips and shreads. Plus I have some of the other stuff left that needs to be rotated before I order all new stuff!



And thanks.... now I have that song running through my head again....... "Ive got a metric ton of coconuts..........."

A can of coconut milk (full fat no filler kind) + curry powder + chicken thighs = "Quickie Curry Chicken". Make sure to broil it a bit so the skin gets crispy and add a little sea salt on top!

Yup, I just made this last night but used Haddock. It's a very tasty treat. Add in a bunch of veggies and it's even better
